Hi Ladies!!

I am on the search for some cool recipes for dinners. It's so hot and muggy right now in Wisconsin, and I don't like standing over the stove and heating up the kitchen too much!! Anyone have anything good they can share?

Thanks, Nancy, for the gazpacho recipe! I LOVE gazpacho, unfortunately my hubby does not (he hates tomatoes). I may have to make it up for me though, I just started a diet and that sounds so healthy!

That does sound good! Found out "mesclun" means mixture in French.

Any kind of salad makes a Cool Dinner to me. Even pasta salad, because you can boil the pasta in the morning before it gets too hot. Also, bacon, lettuce and tomato sandwiches are a favorite, just cook the bacon in the morning. There there's the 'ol let's "grill" and then I can get my hubby to cook the meat outside. I'm like you, I HATE to be in a hot kitchen in hot weather, I'd just as soon not eat at all. Or just dig into the ice cream. And it's not unheard of that we've had ice cream for dinner. BUT, my all time favorite . . .

Gazpacho

6 ripe tomatoes, peeled and chopped (or I've used canned tomatos)
1 purple onion, finely chopped (I've used regular onion)
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley (optional)
1-2 Tbsp chopped cilantro
2 Tbsp chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
Salt and fresh ground pepper to taste
6 or more drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice

Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend. Chunks of avocado are a great addition, along with a dolop of sour cream, just before serving.

I always have a patch of mesclun in my garden..my favorite...my kids call it the salad patch.
my idea of a wonderful cool meal is a big chef salad ( I hardly ever use meat on it though) with cottage cheese in the center..avocado, asparagus if I have some and fresh viniagrette...I could eat that every night. OR just cottage cheese and tomatoes. My kids wouldn't agree with that every night..they would prefer my super duper nachos...but I love it.

Mesculan greens are a mix of different kinds of lettuces. (not the iceberg type) there sometimes is arugula, red oakleaf, forgot the rest of them. They are like a gourmet blend of different types of lettuce. Some of the lettuce varities have a peppery bite to them. They are really delicious! You might find them in your produce section bagged. I think EarthFarms organic has mesculan greens. If any other farmgirls knows anything more pipe up!

Thanks Jenny, what are "mesclun" greens? Never heard of them! Those sorbet sandwiches sound heavenly....

Hi Molly! I just recieved my July issue of Food and Wine mag and these ideas for summer eating kinda leaped off the page at me...Hope you like them too!

Country Ham and Mango Salad

2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon molasses
Salt and freshly ground pepper
1/4 cup extra virgin olive oil
4 ounces mesclun greens( 8 cups)
2 ripe mangoes, peeled and thinly sliced
4 ounces thinly sliced country ham or proscuitto

1. In a small bowl, whisk the vinegar with the mustard and molasses;season with salt and pepper. Add the olive oil in a thin stream, whisking until emulsified.
2. In a large bowl, toss the greens and mangoes with two-thirds of the dressing. Transfer the salad to a platter and top with the ham. Drizzle thr remaining dressing over the ham and serve.

Superfast Sorbet Sandwhiches

Soften mango, grapefruit,blood orange or strawberry sorbet slightly, then sandwhich betweeen crunchy, store bought sugar cookies. Freeze briefly and serve.
