I wait all year for my chives to grow and bloom so I can use the flowers for this recipe!


Tarragon-Chive Flower Chicken:

Serves 2

2 skinless, boneless chicken breasts
1 tbsp margarine
1/2 cup white wine
1/2 cup half and half
2 tbsp chive flowers
1 tsp fresh tarragon, chopped
1 tbsp fresh parsley, chopped
1 tsp fresh chives, chopped

Lightly brown chicken breasts in margarine. Add wine, cover and lower heat. Poach gently until done, about 15 mins. Remove chicken breast to serving plate and keep warm. Increase heat to medium high. Reduce wine until syrupy. Add half and half and chive flowers. Lower heat to medium and let reduce for 5 mins. Add tarragon, parsley, and chives. Cook for another 5 mins and pour sauce over chicken and serve.

****The only addition I make is to add some salt and pepper to the sauce.

This sounds great. I love this section. I'm going to make a farmgirl cookbook for all of the recipes I get here!!
