I have a cast iron dutch oven that is starting to peel a bit on the inside. Any ideas on how to clean it up so it doesn't continue. Just not too fond of those black specks in my food.

I have been cooking my steaks in cast iron for the past 2 years or so. Brown butter, sear steaks on med high to high heat, about two minutes per side for med to med rare. SO good. Better than grilled in my opinion. I have watched so many chefs do that, and finally decided to try, and I will likely never do them any other way.
Man! It has been a while since I've had a steak. Drooling here...

There are a lot of recipes out there for starting steaks on the stove in a frying pan then transferring to the oven to finish - I've always wanted to try it!

i love my cast iron. have not had to reseason them. My chicken fryer looks a bit lumpy on the inside, one day i will need to clean that down. The more you use them the more nonstick they get!! I have about 6 frying pans of various sizes, a chicken fryer with lid, and 3 dutch ovens. Oh i also have 2 outdoor dutch ovens.

When my MJF magazine arrives, the first thing I flip to is the cast iron recipes. I love the romance of cast iron cooking from the days of old!! My husband and I found a few pieces at tag sales, he cleaned them up, and we have just started trying them out. I didn't see a cast iron cookbook by Maryjane - are there recipes hidden in one of her books? Anne

I just ordered a 10 inch cast Iron pan. Haven't used one since I lived at home on the farm. Oh Boy!

We love our cast iron. I have a teapot,different size pans,dutch oven,waffle maker (my Valerie, almost 14 year old. Makes AWESOME waffles in it. I try and it sticks.) corn stick pan. I gave my daughter my chicken fryer because I didn't like the hammered look.My husband wasn't impressed.But now she's enjoying it.

Winnie I have one of the Lodge dutch ovens too. I love it. Dad brought a few pieces when he came to stay and I had some frying pans. I found an old rusty flat, round cast iron pan at a yard sale for almost next to nothing. Brought it home, cleaned it up, and seasoned it. It is one of my favorites to use.

I recently reasoned my cast iron too and it continues to work like a charm. I am so lucky to have my Mom's three frying pans ( small to large) plus my grandmother's corn stick pan. Recently, I was able to purchase a dutch oven by Lodge on sale for a wonderful deal and have enjoyed using it as well.

I do but I don't use them if they are chipped. I don't know if it would damage the pan and these came from my great grandmother when they came over from Holland.

Thank you for info. I meant to say the sides were peeling but imagine the scrubbing down and reseasoning should work. Really like the pan so want to use again.

Also, anyone every have an enamel cast iron where the enamel has chipped? Read you can still use, thoughts?

Hi Rae

I just reseasoned my cast iron not that long ago. Saw a you tube video by Martha Stewart. First you take steel wool and scrub off the old seasoning on the entire piece including any rust spots.. Dry it completely. I do heat my pieces on the stove top to dry. If you do this let them cool down before handling. Then wipe vegetable shortening over the entire piece inside and out including the handles on the well dried off piece. Place each piece in the oven set at 350'for at least 2hrs. You can turn off the oven after two hours but leave the pieces to cool in the oven. Don't open the door. After the cool down your cast iron pieces should be ready to go.
