I recently received a large amount of apricots from my sister-in-law and turned some of them into food for my son. Now that I have tons frozen for him, I still have a bunch left over and don't know what I should make with them. My I sister-in-law told me that her tree is so full and to come back and get more. What do you make with apricots? What's your favorite recipes?

Thanks, Sharon! I love the taste of spice but without a ton of heat! I will have to try some now and see if I want to make some.

Yesterday was Can It Forward Day. I watched a YouTube video of the chef at Jardin make Apricot-Lavender Jam. I was intrigued by the sound and imagine how fabulous the taste would be. You need 6 cups of chopped apricots. Mash them in a 13 x 9" pan with a potato masher. Put apricots, 4 cups sugar, raw, 3 T lemon juice in large bowl with 4 t lavender buds (either wrap and tie them in 3 layers of cheesecloth, or find a tea infuser--a lot easier). Cover the bowl you've put all this in and refrigerate for at least 4 hours. Now put in a large pot, boil until you reach gel point-220º Use 1/4" headspace and process 10 minutes. It makers 6-half-pint jars. I found some apricots. Will pick them up tomorrow. Can hardly wait!

Apricots make yummy frozen yogurt pops if you blend them with plain yogurt and a bit of honey. Last year I added some fresh blueberries out of the garden too and that made for a very tasty treat! Apricots are also wonderful baked in a Strudel or mixed into buttermilk pancakes.

Krista, not silly at all. I think it is mild-medium but adds good flavor (I cannot handle alot of heat).

Sarah, I used the basic jam recipe and added two chopped chipotle peppers :) It is very tasty!

Sharon the Apricot-Chipotle Jam sounds tasty. I'm a fan of chipotle peppers. Did you just add the chipotle peppers to a basic jam recipe or was there more to it?

I was just gifted a bunch and went the jam route :) We tried Apricot-Ginger Jam, Apricot-Basil Jam and Apricot-Chipotle Jam :)

I have not fixed this recipe but I have eaten it at the Durning House B&B in Van Alstyne, TX and it's very good. The recipe is from their cookbook 'High on the Hog'.

Chicken-Apricot Bundles

2 tubes refrigerated crescent rolls
1 c chopped cooked chicken
1 (3oz) pkg cream cheese, softened
1/4 c chopped dried apricots
1/4 c chopped pecans
1/4 tsp celery seed

Press 2 roll triangles into 1 rectangle. Combine all other ingredients. Spoon into each rectangle. Fold, roll over and pinch edges together to seal.

Bake 12-15 minutes at 375

Thanks! I cut some up yesterday and put them in to be dehydrated. I can't wait to taste them.

Sounds really good, Sara. I was just thinking of making a cobbler or crisp, so freezing them for later is a great idea!

I also came across a recipe for apricot chicken that I am considering trying. I wanted to make it for dinner but I don't have enough chicken.

My favorite way to put up apricots is to freeze them for cobblers or fried pies.

When I did a lot of canning, I liked to use apricots instead of peaches, because peeling peaches just took all the hide right off my hands, and you can do apricots with their skins on. Having said that, after years of eating canned apricots, my adult daughter can't STAND the sight of them. Sigh. At some point I turned to dehydrating them, so you can snack on them all winter, or chop them up and use them instead of raisins. I guess I just like the flavor of apricots, so I never used them much in "recipes," just ate them. There was a nice apricot/jalapeno jam, though -- that was yummy!!!
