Posted - Jul 15 2016 : 08:18:18 AM So yesterday I noticed an apple tree at work and got permission to take as many as I'd like. I got a bag full (26 lbs) and took them home and dried some (after soaking in ascorbic acid).
I'd really like to can some, maybe make apple butter or pie filling etc. However, I look at a lot of recipes for apple butter and the like and it calls for tart green apples. These are really rather sweet. I have no idea what variety they are. Apparently the tree was planted when this complex was built around 20 years ago so no one remembers.
So, should I just ignore the requirement for tart apples and just go with it or do you know what I should do with them? If I can't figure it out I guess I'll try drying them all. I may go pick another bag full today.

Posted - Jul 19 2016 : 10:41:55 AM Lucky you! Apples are one of my most favorites. I make a ton of applesauce and my son loves it. I peel and cut the apples and then put them in a steamer for 20 mins and the blend them. I don't add anything and it tastes delicious! I also dry my apples. Some I leave plain while others I add nutmeg or cinnamon and sugar. The apple butter recipe that Sara shared sounds really good. I may even try that this year. Enjoy your wonderful apples and whatever you make with them!

Posted - Jul 18 2016 : 11:47:31 AM Morgan, I say just go for it with the apples! I've made a LOT of applesauce in my life from a variety of apples and it's always good. I usually freeze but can it sometimes. I never add sugar and usually wait until we open it to eat it before sprinkling on some cinnamon. It is then, and only then, that I MIGHT add a wee bit of brown sugar.
I make my apple butter by cooking it in the oven on a low temp for a long time until it's the consistency I want it to be. I do add spices and sugar to that before cooking . . . makes the house smell wonderful!

Posted - Jul 18 2016 : 11:40:59 AM Winnie - I do not know what kind they are but they are more sweet than tart. I didn't know about the festival I don't think but I did know about the badge and started reading up on the history of apples in the world and in the states.
So far I've only dehydrated some, as I was busy this weekend canning 10 half pint jars of blueberry jam. Maybe tonight I can at least get the apple butter out of the way.
I've never been to much of an applesauce person but I do want to make a pie. :) |

Posted - Jul 16 2016 : 04:23:29 AM have fun with them. take a few, peel, slice and cook down in a small pot, making apple sauce. you will be able to see how they cook down and taste, then decide if you can can them up for baking and cooking apples.

Posted - Jul 15 2016 : 6:00:06 PM Wow, what a great find!!!!! I love all things apple and the many ways you. An enjoy them. Sara's idea for apple butter is a great idea . You can also make an apple pie filling in a light sugar syrup and can I the big jars. Perfect for Apple pie or apple crisp !
Are you aware that we celebrate September with our Apple Festival here online at the Chatroom? Yep, we share recipes and information and we have fun. Plus the last Sunday on September is Apple Pie Sunday . We try and share recipes and photos for that day. It is lots of fun and you are going to be way ahead of the rest of us!! Posted - Jul 15 2016 : 2:45:21 PM I've now got two reusable grocery bags full and could probably fill a 3rd or 4th. I'm afraid I'm being greedy but our maintenance man at work said to get as many as I wanted because no one else usually did. I brought today's bag in and told coworkers to get some but only one did. I will probably take them back Monday to see who else may want some. I guess I'm going to be rather busy this weekend!
While out picking them I noticed that a tree nearby that I thought was another apple was actually a pear tree! Some had something that sorta looked like the blossom end rot that tomatoes get but maybe that doesn't hurt all of them. |

Posted - Jul 15 2016 : 11:37:21 AM Lucky girl, Morgan! My dgd's other dgf shared a recipe for canned apple pie mix. He always uses foraged apples/no special variety. His recipe always has turned out fine!

Apple Butter recipe from Ball Blue Book 2013 does not call for any particular apple.
4 lbs apples - about 16 med 4 cups sugar 2 tsp cinnamon 1/4 tsp ground cloves
The canning book also had a recipe for freezer apple pie filling and did not specify kind of apple. All it said was the apples were to be firm & crisp.
