I'm starting a new thread for us that preserve in oil or want to know about it.

Tomorrow I'll be working on "Grilled Mixed Mushrooms in Oil" from my Preserving Italy canning book. It calls for a mix of mushrooms, but I have 2 pkg of baby portabellas so that's what I will be using. Instead of a charcoal grill I will grill them on my George Forman grill.

Yield 1 pint - cure one week in refrigerator before using - good up to three months in refrigerator.

Europeans have preserved in oil for years and still do. I have done a little and want to do more.

Winnie, lemon rind, black peppercorns, and red pepper flakes were added to the hot olive oil. The first step after washing the mushrooms was to add kosher salt and let stand for one hour. After that they were steeped in white wine vinegar for a few minutes so they have a lot of flavors going on.

Sara, the YellowCottage is really working on some delicious sounding new recipes this summer! Great things are happening out there in the cool hours of early dawn. Does the recipe include spices along with the oil for the mushrooms?

Nina, so far so good. The mushrooms will marinate for 24 - 5pm tomorrow - and then I will pack in jar and put into refrigerator. The recipe was easy - the kind that I like - do a step - wait an hour or two before preceding. Gives me time to rest or do something else while I am waiting.
