So a couple/three years ago, a attempted to make red beans and rice in my slow cooker. Unfortunately, I got a bad recipe from one of those online sites. It had about double the amount of salt it needed and I had to throw it out. I am trying again tonight using something closer to what I grew up with. Any suggestions? I am also curious what kind of sausage you farm girls would recommend and how you cook your rice.

Southerners really like their andouille sausage, with a beef keilbasa in second. I make red beans and rice all the time, but I never do it in the crockpot. My grandmother led me to believe the only way was on the stove all day!

I wouldn't add salt until after the beans are done. It takes less water to cook beans in crock-pot than on top of stove. Cover with 1-2" water. Every hour or so check on it.

I find it hard to choose the right rice to cook with the beans so I cook the rice separate and add when beans are almost done so it soaks up the flavors. Season the rice lightly with the same herbs/spices used in beans.

I like a firm link sausage in red beans & rice - spicier the better.
