I love herbs. I grow my own, in an herb garden I planted in the front yard, then dry them at the end of the summer. I love cooking with herbs, and what I don't grow, I buy at the store, relishing in each one! I got to thinking, what is your favorite herb and why? I use basil a lot - pizza, sauces, salads, but I have two top favorites (I can't decide which one I like best). There's rosemary - I have a beautiful plant I overwinter inside each year. I cook from it a lot, making roasts, muffins, breads, and more. It's so fragrant when cooking, I love it so. My other favorite is one I don't think a lot of people use often - tarragon. I use it in sauces, on meats, and add it to my chicken pot pie and my chicken in wine. The pot pie is what we ate last night (using MaryJane's Bakeover crust), and is my dd's favorite dinner.

Posted - Feb 12 2016 : 07:05:00 AM Marjoram is one of my favorite herbs too. Since it's a member of the oregano family it's a good substitute for that herb. Oregano is one of those herbs that people either love or hate ~ no in-between.

Posted - Feb 12 2016 : 06:38:26 AM I've gotten to be a fan of marjoram lately. Just have happened to try a few new recipes that call for it and have loved it. It's kind of of a sleeper hit herb - you don't often hear people say "Wow, you can really taste the marjoram in this!" lol
I also enjoy adding Fennel seeds to my red sauces used for pasta, lasagna, etc.

We make quite a bit of Thai food, so I try to keep most of my Thai basil for those foods, but the extra kick it gives to things, like scrambled eggs, oh yum!

Posted - Feb 06 2016 : 6:43:46 PM Sweet basil and thyme are my favorite herbs for cooking. Mints and lemon balm (both dried and fresh) for teas, Garlic chives in scrambled eggs are divine. Fresh parsley is probably my favorite to put in EVERYTHING though. I'm also quite partial to edible flowers like borage, nasturtium, and roses for salads and sweet garnishes.
I'm always adding to my herb garden! In my climate, most herbs are perennial, so I have a permanent bed for those with two thymes, pineapple mint, aloe vera, lemon balm, sage, rosemary, garlic chives, oregano, and two types of parsley. I'm hoping to add lovage, stinging nettle, and wooly lambs ear this spring. I'd love to grow fresh lavender, but haven't found a variety that grows well in the Texas heat.

Posted - Jan 12 2016 : 12:12:25 PM Nicole, The spicy basil I had wasn't officially called "Thai" so it might have been a different variety. Love it! But I use it in EVERYTHING!!! My hubby and I are "chili-heads" so we like lots of spicy foods . . . NOT so hot you can't enjoy the flavors, but spicy and tasty! CJ

Posted - Jan 11 2016 : 05:10:57 AM Dill is good, too. I forgot about that one. I use it in my eggs! I also love lemon thyme. I have been able to overwinter that in a pot in the house, as well. I will plant fresh basil in the spring. I have a dehydrator so I dry many herbs in the late summer to use in the winter months. My mint I use in salad, and in tea, as well as to keep the chickens cool in the hot weather. My rosemary plant is my baby, though. I love sage, too, but have to grow a lot since it is a biannual. Nothing tastes so good as a Thanksgiving turkey with FRESH sage!
I like lavender, too, Emily, and have a pot in the house that will transfer outside in the summer. However, my DH says eating anything with lavender is like eating perfume, lol. I once ate lavender creme brulee. It was heavenly.
CJ and Shannon, I had spicy Thai basil once. What do you use it in?

Posted - Jan 10 2016 : 9:36:14 PM My two favs are rosemary and lovage. We use alot of cilantro, marjorum and oregano as well. And its hard to beat a cup of hot ( or iced) lemon verbena tea as well. We grow all of these but use alot more cilantro than we grow ouselves so i di have to buy it also.

Posted - Jan 09 2016 : 1:22:02 PM For you FarmGirls that chose basil as your favorite herb I saw the neatest recipe this morning on Chef's Life on PBS. Basil whipping cream. It was served on strawberry shortcake made with coconut milk cornbread.
Steep basil for 5 minutes in heavy cream at medium heat. Strain - cool in refrigerator - whip
Thinking about trying the coconut milk cornbread. Should make a good muffin.

Posted - Jan 09 2016 : 12:56:13 PM I have two favorites and they are for different reasons. I love lavender for the smell of it, I cook with it occasionally but my husband hates it so I don't add it to much. My favorite cooking herb is summer or winter savory. They are very similar tasting to me but the winter grows so much better here. I add it to my burgers, roasts, steaks, almost any red meat. I just love the flavor it gives.

Posted - Jan 08 2016 : 06:13:08 AM Most of the herbs I grow are in containers ~ a few in the ground. My favorite - go to herbs are: Rosemary, sage, sweet marjoram, English thyme, and Greek oregano. In second place are: lemon grass, mints, chives, and tarragon. Tarragon won't grow in the Texas heat so I have to buy it.
Mexican marigold is a substitute for tarragon but I haven't had much luck growing it. Another herb I buy is Mexican oregano ~ I really like it and it has a distinct flavor. I find it on the Mexican herb rack in the grocery store.
