Posted - Jan 05 2016 : 10:38:51 AM Our neighbor had given us a couple packages of locally grown and butchered lamb stew meat. We've been wanting some good lamb, but I'm picky about my lamb, wanting to KNOW where it came from, how it was raised etc. (I'm that way with all meat, actually)
So, yesterday I decided to make some good ole Irish stew, which I did in the crockpot. It was very tasty and we were glad to come in from doing our cow chores on a cold, snowy evening and having our supper already ready to eat!

I love Irish Stew, too. I haven't made it in a while. I should soon. I often use beef instead of the lamb. The recipe I use is similar - one I made when i was in high school! I bet yours was so delicious. I don't like venison myself. My parents were always trying to "hide" it in dishes - but I always knew!

Posted - Jan 09 2016 : 5:10:03 PM Soon I'm going to make a similiar stew with elk. We have a friend who has given us a couple packages of elk, one of which is stew meat. I like elk, especially when I know the hunter and how it was processed. I'm not crazy about venison, however, we've eaten a lot of it. CJ

Posted - Jan 05 2016 : 4:42:31 PM I'm fixing to have crockpot oatmeal going overnight tonight!
I'd kinda forgotten about this recipe, which uses steel cut oats, but made it while my daughter and SIL were here for Christmas. It's really yummy and leftovers are good for later in the week.
I'm really tired of the regular oatmeal routine, so I'm going for this again for a nice change. CJ

Posted - Jan 05 2016 : 1:27:18 PM IRISH LAMB STEW (Turn crockpot on so it's preheating)
1 lb. lamb stew meat pieces 2 large (not jumbo) potatoes, cut into chunkc 5 medium carrots, cut into chunks 1/2 cup chopped celery 1/2 cup chopped onion 1 Tblsp. minced garlic 1 tsp. ground savory 1 tsp. ground basil 1 large bay leaf, crumbled 1 tsp. fresh rosemary, minced 1 tsp. salt 1 tsp. ground pepper 2 c. vegetable broth 1 bottle Irish ale, (I used Killian Red . . was looking for Guinness but the store didn't have it . . Killian was good too!)
Place all ingredients in crockpot, cook on high for about 1/2 hour, then turn down to low heat and cook for another 5-6 hours, Stir occasionally.
Like I said it was a "toss in as you go" recipe, so I hope you like it and enjoy it as much as we did. Of course, a nice piece of crusty artisan (Irish Soda Bread? . . we didn't have this either) bread to go with it!
