My sister gave me a 99 cent marked down bag of fresh ginger roots (13 total) and said "I don't want them but I know you will do something with them".

On-line I found a recipe for candied ginger and will be working on that today. I will save a couple of the roots to use fresh. Instruction for storing fresh ginger was to store un-covered in the refrigerator and grate/slice as needed.

Hi Sara! Long time no talk!
I have a Vitamix, and you can put the whole pieces of ginger in, peel and all, buzz it up, and freeze in 1 T portions. It is so convenient.
Not sure about the candied version; I have a savory palate.
But bring on the spicy!!!

I followed the recipe until it was time to add 4 cups of sugar. Just couldn't see using that much sugar for 11oz prepared ginger. I used 3 cups of sugar & 3 cups water. If I do it again I will cut the sugar a little more.

Yield: 7 4oz jars of ginger and 1 pint of the syrup.

My sister has a cough so I fixed her up a bag of lemon, a couple jars of candied ginger, and 1 jar of local honey. Hope it helps her.

Winnie, I'll check MF's blog out. I forget to visit it. Today she sent out e-mail recipe for candied lemon rind. Will have to give that a try too.

In my 30s I visited Mexico City and bought a candied lime with coconut from a little candy shop. It was delicious but oh so sweet.

Sara, last week on MaryJane's blog, raisinjane, she posted a simple candied ginger recipe. Maybe you could use some of the ginger up by making a batch of that? It is great in baking but also just makes a cup of tea wonderful. It is also pretty in canning jars as a gift.

It grows great for me but it needs afternoon shade and plenty of mulch. I am next door to Bandera and north of San Antonio. The infused honey lasts several months in the refrigerator. Gets me through the winter here.

You can also freeze it. I put whole roots in the freezer sometimes and I have some sliced in the freezer, plus some that I dehydrated to use as well. For some reason, I can't seem to keep roots in the fridge for very long before they start to mold so I rarely do that.

Kelly, I didn't know ginger would grow here in Texas. I'm in northeast part of the state ~ where is Pipecreek? I have honey from this area, lemons, and ginger so I might make up a batch. How long will it keep? Do you blanch the ginger?

What a great find. I grow my own ginger. You can also infuse honey with the fresh ginger and lemons. Make a wonderful regimen for winter coughs and sore throats.
