Even though it's November, my herb garden is still going crazy! I know this will not be the case for much longer, so I'm trying to harvest and use all of my beautiful herbs before it's too late.
I wanted to share one of the ways I've been using up my fresh herbs. I add a container of salt (I just used regular iodized salt, like Mortons) to my food processor, and add a mixture of fresh herbs, whatever you have on hand. Pulse them together until all of the herbs are ground up and the salt turns a beautiful green color. Then I spread the mixture out to dry on a cookie sheet to dry overnight and store it in a glass container. It looks so fancy and expensive, and tastes delicious!

Stephanie, I ended up making a blend of spices and herbs for myself and to use to flavor in cooking. It was a little salty. So, I just have to remember to use it in moderation. (I ended up reading the ingredients on a Mrs. Dash bottle to get a list of herbs and spices, and adjusted it a little. No pepper added. Then I made a blend for DH the same way with no salt or pepper. It came out a little spicy from red pepper flakes and paprika. (He can have that; but, not black pepper.) Again, I will have to be careful in how I use it. Each made a little salt shaker full. (about the size of a Mrs. Dash container. I will try again to make something a little more table ready. Less salt and red pepper.

Rats! It's too late for my herbs in the herb garden . . . they are frozen for the winter. I do have some rosemary in a pot though. I've been told that rosemary won't survive the winter here outside, so I've potted mine to have in the house through the winter and then it can go back out on the deck next summer. I've had 2-3 plantings of rosemary not survive in the past out in the garden.

Stephanie, your herb salt sounds really good. Along with making herb salts I also use celery leaves to make celery salt.

Lemon pepper can be made with dried lemon zest & peels.

The possibilities are endless when you think about it. Herb & citrus sugars are good too.

Stephanie, your post is very encouraging and timely. I have just read through and plan to use Erin McIntosh,s article from MaryJanesFarm issue November 2015: "DIY: Herb-infused Salt Blends.
DH now refuses to use any seasoning blends using black pepper. Although he has always like black pepper, he insists this spice is causing him digestive problems. So, I will make a blend he can live with. I grow many herbs also and have dried many of them. Wish me luck.
