Okay I just read the saving money on groceries topic and I see a lot of you make a weekly(or longer) menu. I have done this before but I tend to cook the same 5 or 6 things over and over again. I'm getting bored! So I thought maybe for those of you who make weekly menus you could share them. I am interested in the main course and what you fix for sides (I think we have corn EVERY DAY!). I know it can be daunting to type out recipes so that isn't necessary unless you want to. I think maybe this would help some of us who are looking to become a little more frugal.

Hey, there, Theresa! I bake it at 425F here for about 15 minutes - BUT since it's darn cold around here, I use a baking stone and preheat it for about an hour (I know, it's a LITTLE much -) and then I put the baking stone out on a cooling rack in the kitchen and it heats the kitchen up pretty well for a while - dual-purpose farmgirl! Something that makes it even more yummy is to put some chopped walnuts on top - if you have some extra time, saute the walnuts in a little olive oil first - just BARELY brown them. If you let them go to hot or too long, you will definitely set off the smoke alarm! Enjoy!!!

Sure! I make a basic "pizza crust" - actually it's a Farmgirl Panbread from the MJF Farm Kitchen magazine, and then top it with pesto, fresh mozzarella rounds and I spread around some wilted spinach (wilted by running under hot tap water). It's not fancy, but it's really good!

I am with a few others here...I didn't even bother this week and probably wont next week either. This week we will be eating supper away from home 4 times (family b-days, hoilday parties, etc) and the following week hubby and I are taking off with out the kids so they will eat at my parents and we will eat MJ's meals in a pouch. Brunch is our first meal here and it will be stock with homemade Essine bread, cheese, and veggies at least twice, stew two or three times, Dosas once, Sweet Potato Cobbler once, and maybe steak and eggs once or twice.

Tonight and tomorrow night it's just my little boys and me, and when I asked William (3) what he wanted for dinner, he said, "salmon - the kind we eat, not the fish." SO, tonight is salmon, and tomorrow night is homemade spinach and mozzarella pizza, then I'm making a big batch of lemon chicken soup on Monday night. Tuesday we're heading to the "city" for dinner with my husband's family, and Wednesday I think I'll just reheat some frozen lentil soup because I know I'll be tired. Thursday we'll have some type of meat - maybe hamburgers grilled outside or lamb chops, and whichever of those we don't have Thursday, we'll have Friday, and Saturday? Well, I think I'll clean out the refrigerator and make a Bake-Over!

Last week I didn't even try to make a menu..we had three Christms party/programs to go to and I worked 3 days at the school too..add basketball practice and my husband having church responsibilities until pretty late at night and we just had the weirdest dinner week!!
I will make my menu tonight for the coming week..which is a little calmer I think. I will go Sunday thru Saturday this week..we will have a family dinner at my sis in laws on Christmas eve, and a huge Christmas feast / brunch here on Christmas day..over 30 people. Our company shows up on Friday night..so I will be feeding three extra Saturday night.

This could be a great topic.

I have been working so much overtime the last two weeks I have just not been cooking at home, so we have been eating out every single night.

I thawed out some hamburger and sausage last Sunday to make meat loaf but since it takes 2 hours to cook when I get home at 7:00 it is too late. I think by now I will just have to throw it away. Maybe I should make meatloaf the night before and just reheat the next day?

At the times in my life when I have been organized enough to prepare a menu ahead and have everything planned out it seems that I save a lot of money and my family eats better too. So with that in mind, here is this week's menu:

Sunday - Pot roast with mashed potatoes, roasted carrots, celery and onions, fruit salad
Monday - Spaghetti and meatballs, lettuce salad, garlic bread
Tuesday - Soup and sandwiches
Wednesday - leftovers from Sunday
Thursday - homemade pizza (starts the weekend! hurray!)
Friday - baked scrod, green beans, carrots, wild rice pilaf
Saturday - nachos, burritos and salad

I'll usually make a caserole type dish and eat off this for a few days I can tell a winner when hubby will eat it too for a few days normally he doesn't do leftovers so when it disappears, I know it's a hit

I like to do a taco pie

take a pound ground beef cook in a skillet and break into tiny pieces as it simmers drain and mix w/ 1 can refried beans and taco sauce or 1/2 jar salsa for the base take 1 package cream cheese mix w/ 1/2 tub french onion dip smear this into the bottom of a 9x13 pan take ground beef/bean mix and smear on top of cream cheese top w/ diced peppers olives chopped onions or whatever bake 350 for roughly 20 minutes sprinkle top w/ fine cheddar cheese serve w/ taco chips on top of lettuce or burito shells

this typically disappears in 24 hours no matter how much I make it's a huge hit at potlucks too those dips chips make scooping easy

Be sure you leave some flexibility in your menu to eat what is in season. Eating local produce in season is a great way to save money and eat well!

Thanks for posting your menus. This gives me some great ideas. I would like to try and make one up for 4 weeks and then just keep rotating. That is my goal anyway!

I love this! I am already so inspired! No time to post this week's list, but I can tell you that the farm I worked on in Denmark had a set schedule for several days of the week:

Wednesday was always vegetarian.
Thursday was always porridge followed by a "treat" (something too expensive to get full on, but good to eat)
Friday was always fish.
Saturday lunch was always Danish pancakes (more like crepes) and soup.

While it might sound boring, it made meal planning SO much easier... I *loved* it. =)

I have a recipe list to remind myself what I like to fix for dinner to avoid the 5 dinner repetition -- I fell into that too!

Here's my complete list (I know, and you just wanted this week's dinners!):

Everyday Suppers (mostly vegetarian unless I happen to have leftover meat):
-- Enchiladas with cheese and beans (I make the sauce)
-- Vegetarian Chili (usually serve this with cornbread and salad)
-- Manicotti
-- Sambar Curried Lentils with Basmati Rice (I posted this recipe somewhere on the site)
-- New England Baked Beans (I fix them vege, but they are excellent with a very small amount of meat as well)
-- Pad Thai (numerous recipes online)
-- Pizza (I top with what I've got)
-- Tuna Noodle Casserole
-- Baked Macaroni and Cheese
-- Thai curried potatoes and eggs
-- Baked potatoes and ommelette (with loads of potato toppings)
-- Biscuits & Gravy with hash browns
-- Popcorn (okay, I do this very rarely, but sometimes I only want popcorn for dinner!!!!)
-- Nachos (chips, black beans, brown rice and cheese served with salsa)
-- Pot Pie (veggie or leftover meat)
-- Greek lentil soup
-- Curried pumpkin soup
-- Pureed Parsnip soup
-- Tamale Pie (black beans & tomatoes in cornmeal "crust")
-- Shepherd's Pie (beans or leftover meat)
-- Mushroom Barley Soup
-- Risotto (made with whatever I have around, really -- if I have mushrooms, they go in, if I have squash we have that)
-- Polenta with Pasta Sauce (tomato or cream-based or butter-based)
-- Gnocchi with Pasta Sauce
-- Pasta with Pasta Sauce
-- Mushroom Stroganoff
-- Egg Foo Yung (LOTS of work)
-- Vegetarian Potstickers (with TVP/carrot/cabbage filling)
-- Foccacia and cheese (I use a tomato "salad" on this to make it more of a supper and less of a snack)

Special Suppers (Sabbath, Birthday, etc. - these are mostly meat):
-- Roast Turkey
-- Pot Roast
-- Fetticine Alfredo
-- Roast Chicken Quarters in lemon sauce (I roast the chicken parts, potatoes and green beans all in the same pan)
-- Cholent (Beef stew)
-- Curried Lamb Stew
-- Sweet and Sour Meatballs
-- Barbequed Beef Ribs
-- Spanikopita (spinach and feta in phyllo dough, which I buy)
-- French Dip Sandwiches
-- Eggs Benedict (tomatoes instead of bacon. it's cheap, but lots of work and fat, which is why it's a "special" supper)
-- Baked Salmon
-- Baked Halibut (in beurre blanc, this is our anniversary dinner with garlic mashed potatoes. YUM)
-- Brisket or Corned Beef Brisket

If you'd like any of these recipes, let me know. Good ones can be found just about anywhere though.

We even have businesses around here that you go and put together 5 to 7 meals for a set price. My issues with the food is that most are not organic, they do not purchase products from local growers, they are not for those who do not eat commercial raised meats and lastly not everyone is concerned with recycling (plastic and paper are in mounds everywhere). Even among my friends we all have such different cooking, eating and recycling practices that I have just learned to plan my own meals. I find that cooking in large batches your main meals and freezing them in correct sizes for the two of us make life work best. I take advantage of inseason local produce to stock the cupboards and freezer. We all get in a rut and I visit my local library to aid in adding to my recipes and looking to other cultures to give our life new spice. Happy cooking

I have a set 2 week menu that I try and follow but it varies with the weekly specials. Since bith my husband and I work our big meals are on the weekend and we keep it quick and easy through the week. Julie I love the breakfst for dinner night- we do that too.

So my two week plan is-

Sunday- roast (chicken or beef) mashed, gravy
leftovers saved for Wednesday
Monday- Spaghetti w/ Italian Sausage, garlic bread & salad
Tuesday- Omletts and french toast
Wednesday- Leftovers from Sunday either Chicken salad or BBQ Beef Sandwiches
Thursday- Chinese night- egg rolls, pot stickers and a stir fry
Friday- Homemade Pizza
Saturday- Boiled Dinner

week 2-

Sunday- roast (chicken or beef) mashed, gravy
leftovers saved for Wednesday
Monday- Spaghetti w/ Italian Sausage, garlic bread & salad
Tuesday- Egg Bake w/ pancakes
Wednesday- Leftovers from Sunday either Chicken salad or BBQ Beef Sandwiches
Thursday- OUT
Friday- Quesadillas, beans and rice
Saturday- Homemade soup, french bread and a chillover dessert

Alot of people here in our town are doing what they call "dinner clubs". They get 5 families very close to the same size together and buy pans...usually a $25 to $30 investment up front each family...and then each gal is in charge of cooking for all five families for one night of the week. Everyone delivers the meals by 3pm..I guess to be heated up for supper. The ones I know who are doing it love it. I am way too much of a control freak for that..but for some people it works great. Alot of them say it is great to plan for one big cooking day per week and not have to cook for four nights and then they have left overs or easy fun food on the weekends. I know of at least 5 different groups going on right now. I have been asked to be in groups twice, but declined. They have planning meetings I guess every month or so to plan the menus..each comes with 6 recipes or dinner ideas. They have to have a certain number of sides and in some groups a dessert too. just and idea.

my week's meals have been helter skelter , but at least everybody got fed..ha.I think I need to go back to the planning thing too.
Too often it's a "look in the freezer or cupboard at the hour before dinner" type of thing and toss together what I have on hand. hmm..you all have got me thinking I need to get back to my once a month cooking/freezing and more thorough menu planning....after the holiday hustle and bustle for sure!...a New Years resolution already..:0)

Yeah I have this AWESOME smoker that goes in the oven. It is SOOOO yummy. It's been almost a year since I used it cause I have to store it on the top shelf of the pantry and I forget about it!

Our menu is a little different this week since we have two Christmas party dinners to go to....a work one for my husband and a church one..but here goes...
Monday: Tamales with Chili and cheese with cole slaw, and home canned peaches
Tuesday: creamed chicken over rice with peas, fresh fruit salad and rolls
Weds: Philly cheese steak Sandwiches (made with strips of round steak, bell pepper and onion with jack cheese on french rolls) green salad and peaches
Thursday: church party (we are having roast beef and the rest pot luck)
Friday: bbq style pork spare ribs, baked potatoes, corn and applesauce
Saturday: Work Christmas party (a turkey dinner with all the fixings)
Sunday: Super Nachos (torilla chips with melted jack and cheddar cheese, refried beans, sliced black olives, tomato, lettuce and salsa and sliced avocado. Topped with sour cream and hot sauce or green sauce) with yogurt parfaits.
I serve milk with each dinner. I probably would have made soup one night and a chicken meal on one night when we have the parties to go to, and we alway have one meatless night..the nachos this week..but you can add meat to that) Julie..your Thursday sounds great to me!
