So far I've put up dilly beans, kidney beans and today is turkey stock. When I'm done today I will have canned 24 quarts. I still have 3 turkey carcasses to make more stock from.

Yesterday I dehydrated the tomato skins that were left over from the sauce that I canned. My husband was so happy to help me with those! He loves to put them on our morning eggs! We have put them on breakfast sandwiches, too! So good!

Thank you, Girls, for all of the kind words! I am 71 and learned to can in my younger years from my Mother-in-law. We were renting a small house that had a peach tree in the backyard. I am so glad that I learned such a valuable skill from her. Now my husband and my GrandGirls are learning from me. Having a great time in Southern California!

Lisa, I'm always amazed that you remember black cherry ice cream. One of these days I may get back to writing about Pearl and the girls sitting around Pearl's table eating black cherry ice cream and drinking Merlot wine. One of these days.

Well Sara, you certainly did your due diligence in your quest for the perfect cherry preserves! I'm sure they will be delicious. I would also be looking for a recipe with less sugar. Would be good with your black cherry ice cream. LOL

This morning, I put up eight 4oz jars of cherry preserves and they all sealed. One recipe called for 4 cups of sugar, and I just didn't want that much sugar, so I looked online and found a Martha Stewart recipe for 2 cups plus 6 Tbsp sugar, so I went with her recipe. One recipe called for one quart of cherries, the other for 2 lbs. I went online again and found out 1 quart equals 2 to 2 1/2 lbs of cherries depending on whether they are pitted or not.

Congrats Nancy! I'm glad you were able to get some tomatoes to grow. Your fruit sounds wonderful.
I canned some bread and butter pickles yesterday.

I remember the summer days spent canning fruit from the orchards where we lived. It's so rewarding seeing the shelves full of jars of fruit and other good things. You are so lucky to have a husband who wants to learn.

I am so proud of my little accomplishment! I was able to can seven pints of spaghetti sauce from my two little tomato plants this year! I have not had any luck growing tomatoes! Them just wouldn't grow. . .so, this year I did some studying up on tomatoes and watching some YouTube videos. Success! Next year I plan to grow 10 or so plants. Also. today my Husband and I harvested a big bucket of apricots that we are going to can together! He is so excited to learn to can. . .I love it! Peaches are next, and then the plums! We are going to be quite bust for the next couple of weeks!

Sara glad your enjoying that canner. It is nice that it can pressure can and water bath can. I have done both also. I have read that you process a small jar the same time as lets say a pint. Also if adding an ingredient, you process for the time of the longest ingredient. So if you add meat you process for the meat time. Happy Canning everyone.

Nancy, I don't feel up to posting the recipe but if you will PM your address to me, I will be happy to copy it and get it in the mail. I would be happy to do it for anyone else who wants the recipe.

The reason I chose this recipe is because it uses canned tomato sauce and paste instead of fresh tomatoes. I used store bought but if you have home canned sauce or paste that would be great.

Canned 9 half-pint jars of pizza sauce this morning. It took three canning books to get it done. "Not Your Mama's Canning Book" had the recipe I wanted to use but it called for anchovies that I did not want to use. Because of the anchovies the pizza sauce had to be pressured canned. In my Ball Blue Book I found a pizza sauce recipe to be processed in a water bath canner. It called for bottled lemon juice so I bought bottled lemon juice. The recipe did not give processing time or amount of lemon juice for 8oz jars. In Better Homes and Gardens Special Issue Magazine I found a pizza sauce recipe for 8oz jars with processing time of 35 minutes and 1/2 TBSP of bottled lemon juice.

I took a hint from Michelle and wrote all the info in my canning books. Thanks Michelle, next time I do pizza sauce I will have the canning info at my fingertips.

BTW it was the first time I water bath canned in my electric canner and it was so easy.

Canned 7 pints Mayocoba heirloom beans today and they all sealed. It's a Mexican yellow bean, now grown in California, and in the pinto bean family. A good soup bean.

Interesting about those beans. I can the usual beans, black, great northern, kidney, chili, pinto. I think that is all. I did make a black bean and corn salad/dip type recipe that was pretty good. You eat it with chips.

This morning I canned 7 pints of Jaccob's Cattle heirloom beans and happy to say they all sealed. You can read the story of the speckled and solid brown cattle in Genesis 30. The beans have a few of the solid brown ones but mostly they are speckled just like in the Biblical story. The one thing I don't like about the unusually marked heirloom beans is once cooked they lose their colorful marks and Jaccob's Cattle heirloom bean now looks like a red bean, a pretty red bean but no marks.

Krista, I have always made a simple syrup with equal parts sugar and water. For each cup of water add one cup of sugar. The amount of water would depend on the amount of juice from the crushed strawberries. If you don't need to add water, then add the sugar to the strawberry juice. Add the juice of one small to medium lemon. Should be enough sugar to make it shelf stable.

Bring syrup to a boil for 4 minutes; add lemon juice; and follow canning procedure. Can for 10 minutes in a water bath canner.

Krista, I forgot to say the amount of juice or water depends on how thick you want the syrup.

Sara, if you don't mind, can you share with me what I would need to do? Is the syrup of just strawberries, sugar, and water good? Or does it need other stuff to make it shelf stable?
