Posted - May 29 2015 : 5:02:47 PM Here it is the end of May and I finally canned up my cranberries that I had bought last year from a local bog. Just a little slow! I canned whole berrys and did a double batch of sauce. I followed directions in the ball canning book. hopefully they will be yummy in some meat recipes I want to try. I think I have a part of another bag of them left and want to try drying some.

Posted - May 31 2015 : 08:30:13 AM Denise - We stock up whenever they go on sale at Costco, then just vacuum seal them in half gallon jars. That way, we get the best price we can and hardly ever run out. But believe me, this year I'm going to try making my own. They ARE expensive! But we love them (I always joke its the last vestige of my Cape Cod upbringing remaining in me!), and we only use small amounts at a time as an accent in our foods. :) Hugs - Nini

Posted - May 31 2015 : 06:13:34 AM Wonderful, I always make my own at the holidays. Everyone seems to enjoy it. Nini,where do you get that many to store that way. They are so expensive to buy or do you make your own?

Posted - May 31 2015 : 04:05:59 AM I had googled drying cranberries, and it said to boil them in water till they burst. I don't remember if it was a sugar syrup or not. Will have to look it up again before trying.

Posted - May 30 2015 : 12:06:51 PM Awesome, Michele! Congratulations! I did cranberries for the first time last fall and was just THRILLED with the end product! I didn't do whole cranberries, though - just cranberry sauce in 1 1/2 pint jars. It was WONDERFUL! I'll never go back to store bought again! As a matter of fact, I ordered cranberry plants from Baker Creek this past winter and they just arrived yesterday! I am so anxious to plant them and see how they do! How cool would THAT be - GROW your own, AND can them! SUPER cool!!! I've heard that drying them is a challenge... How do you plan on preparing them? Are you going to prick them, cut them in half/pieces, or maybe even going to coat them in simple syrup first??? I would love to know what you do and how they turn out! We LIVE on craisins! We use them in salads, in baked recipes, in different dishes... We always have a big half-gallon jar at the ready in the cupboard, but I would love to make my own for sure! Please do share, okay?
