If you grow summer squash, yellow straight or crook neck varieties,, here is an idea. After many scorching and dumping, I came up with a better way.(I call these my GOD IDEAS OR MOMENTS. Meaning I give him credit for a great idea.)
Spray your crock pot with cooking spray. Place a stick of butter in the crock pot.Next fill the crock pot full of squash. Just rinse it off, cut off the ends and chunk it up. Put the lid on and set it on high. Walk away. After an hour give it a stir. Add salt and pepper.(just a bit of salt, you will add more if needed at the end.)also add three tablespoons of dried onion flakes.
Put the lid on and go sew. After about 45 minutes stir again. Now get that old potato masher and break t h e squash up. Put the lid on and cook until you like the consistency. I add a chunk of Velveeta cheese, about 1/2 pound (which is 1/4 of a 2# box. Chunking up so it will melt quickly. Stir. Adjust seasonings.
It usually takes about 2 & 1/2 - 3 hours. Now get a small bowl and a spoon so you can sample your candy squash. You may want seconds and thirds. I PROMISE YOU...THIS STUFF IS GOOD! Notice that no water or sugar were added. I am begging you to fix this. You will be glad yo did. Now, if you have already been doing this for years, that is great, but in my neck of the woods I haven't run across anyone who has. We eat, share and freeze ours.

We love yellow crook neck squash. This recipes sounds good. Thanks for sharing it, we are excited to try it.

Best thing it is not scorched, and since no water is used it is pure squash flavor. The cheese just improves the consistency. You can not tell it is there.

Marilyn, this does sound pretty delicious! I bet It would make a great potluck dish as well for a crowd. Plus I like that you can freeze it for later use.
