I have a question. Why do you need yogurt to make yogurt? Every recipe I have seen says that you need yogurt to make homemade yogurt. I'm so befuddled.

I make yogurt in my Excalibur Dehydrator. First I heat 1 gallon organic whole milk on the stove to 185 degrees. Take if off burner and cool to 110 degrees. When the milk reaches 110 degrees, whisk in 2 to 3 tablespoons of yogurt with active yogurt cultures. I use store bought organic plain yogurt with active cultures as my starter initially then save some from the batches I make from then on. Transfer yogurt to glass quart canning jars and place lid on tight. Remove all the trays from your dehydrator. Preheat your dehydrator to 105 degrees. Remove the front cover and place your jars on the bottom of the dehydrator. Place the cover back on the dehydrator and allow to incubate for 8 to 10 hours. I love it but it is a bit less thick than store bought yogurt.

You need the cultures that are in yogurt to make more yogurt. You can use what is called yogurt "starter" but it is still cultures.
I use "Yogourmet" freeze dried yogurt starter to make the yogurt in the small jars (2/3 cup) in a yogurt maker (using 1 qt. raw milk). I then make yogurt from raw milk in a crockpot (1/2 gallon per batch) and use one of those jars for the culture for that. My daughter makes yogurt in a crockpot and just saves enough to make the next batch.

If you choose to use yogurt from the store for a starter/culture it needs to be plain . . no stuff added to it. I prefer organic, Greek style.
