I am trying to find a recipe I used to have. Fresh almonds candied with raw sugar. No honey. The almonds are roasted and tossed with the sugar and the sugar crystalizes and looks sparkley on the almonds. I tried the one using raw sUgar and honey and that wasn't it. Please Help. THANKS

Thanks Karen I'll give this a try. I think I need the raw sugar to make the chrystals on the almonds.

I don't know if this is kinda what you want...
in MJF Farm Kitchen issue, page 107

Candied Almonds

2 T maple Syrup
1 T oil
1 T apple cider vinegar
1/2 cup raw almonds
Mix together syrup, oil and vinegar in a small heavy skillet over medium heat and cook until syrup bubbles.
Stir in almonds.
Continue to stir until nuts are toasted and evenly covered with syrup, about 10 minutes.
Transfer the nuts to parchment paper and cool completely.
(these are really good)

Sounds good! I use raw sugar and I love almonds. I'd like this recipe too.
