 what to do with 30 lbs of sweet taters?

my husband bought a bag full of sweet potatoes on Saturday..I was thinking I could just bake a bunch of them as "baked potatoes" and then freeze for just quick rewarming..but..does anyone have other ideas other than just cooking and scooping out he pulp to use for pies?

Any recipes?

Sweet potato casserole actually freezes pretty well. Any leftovers, you can use for stocking stuffers!

actually wound up with 6 jars of lemon marmalade..kept one for our family, shared one with another family, then the other 4 are Christmas gifts for family.

As I create dishes using the sweet potatoes I will take photos and compile the recipes.

As of right now..I just have them in the freezer but will get started making up dishes here and there from them.

I'm making lemon marmalade..already have it started..should winf up with 4 good size jars when its done.I thought about lemon curd but didn't want to have to dash off to the store for eggs. So ..I had the pectin and sugar..will finish it up tomorrow..has to sit overnight then add the pectin to it.
Fun/fun though.

thanks gals..I baked them all up today and shared a few with the neighbors..I just kept 8 of them for "twice baked" ..the rest I mashed and put in bags in 2 cup increments to use for pies, breads, and yes..maybe even cheesecake:0)thanks so very much for the ideas.

I couldn't resist having one for lunch today after I got them all baked..so yummy with a dash of cinnamon and a touch of splenda and a dab of butter on them. umm yum...it's a southern thang. ..LOL

the neighbours liked that I gave them some...so guess what I have now in my sink in a colander and in the drain board waiting for me to make?

haha..about 8 lbs each of oranges and lemons!!!

good gracious!

So..I'm going to be making lemon marmalade and orange marmalade in the next couple of days!

Fun, fun!

So, now I know what some folks on my Christmas list are getting..ha.

Sweet potato pie tastes almost like pumpkin. Ohhh - what about a sweetpotato cheesecake????? oh yum that sounds good!

Sweet potato chips are delicious! Make exactly the same as regular potato chips and season with a little garlic salt or sea salt.

I nuke one for lunch with a little butter!

That's a AWESOME deal! I've not been able to get them for less then 1 dollar a pound. Mostly around 2 to 3 dollars a pound here. But, I live in NYC.

I've always heard of "sweet potato pie," but have never eaten or made it. If you give it a try, let us know how it is! My son just LOVES sweet potatoes and yams, and I've baked many of them and frozen them in portion-sizes. It's really handy...

Yup if I could afford it (sweet potatoes are so expensive!) I would be making it too! lol I love all kinds of "butters"! lol haha Apple, pumpkin, cherry, I could go on! lol One good thing is they are lower in sugar then jams. So I reason they are healthy too! lol

oh great..I never thought of making a sweet potato butter with it! I love apple butter so I'm going to look for a recipe for the sweet potato butter too.

All the other ideas are great..my brain was just on "brain fog" today..so thanks gals..I'll try that struesel topped stuff too..looks great.

How about some sweet potato pies pre made for turkey day and Christmas, or to give as gifts.....or, if there is a baby in your life at all, gift his Mama with some homemade sweet potato babyfood, or you can send them to me!!!!(lol)

What about canning some into sweet potato butter. I've never personally made it but I've seen it for sale, so there has to be recipes for it. I love pumpkin butter so I would think sweet potato butter would be just as yummy!

I call my frozen sweet potato/pumpkin/squash purees "something orange" purees and use them for the following:

Baby food
Pies
Kugels (I posted a pumpkin kugel recipe last week or so that could just as easily be sweet potato kugel)
Bread (squash bread, zucchini bread, pumpkin bread, sweet potato bread)
Pudding
Curried soup (or other flavored creamy soup if you aren't into curry)

The fact is all these orange foods are super-healthy, high in vitamin A and antioxidants. Plus kids love them because they are so yummy-sweet. Here's my SUPER-SECRET "Something Orange Puree" recipe (it's best with sweet potatoes, but squash and pumpkin both work beautifully):

Something Orange Puree with Streusel Topping:

4 lbs Sweet Potatoes or other orange food (pumpkin, squash, etc.)
1/3 cup orange juice or 2 tablespoons frozen concentrate
2 tablespoons brown sugar
2 tablespoons butter or margarine

For Streusel Topping:
1/2 cup flour
1/3 cup almonds or almond meal
3 tablespoons brown sugar
2 teaspoons sweet paprika
1/4 cup butter, softened

Bake the potatoes at 375 degrees until softened, about 1 hour. Cool until you can handle with comfort (you can skip this step if you baked a whole bunch of sweet potatoes at once and froze the puree, of course). Scoop out flesh into baking dish and smoosh with a fork and the orange juice, brown sugar, and margarine. Combine streusel ingredients (using a food processor if you like, and if your almonds are whole) in the order listed. Glop the streusel onto the puree (don't worry about spreading it evenly, it will just dive you crazy and won't work anyway -- the heat will cause it to spread). Bake at 400 degrees until streusel topping is crisp, about 45 minutes, or less if you didn't cool the potato puree all the way and you need to eat dinner soon.

Oh I thought of another. Slice raw potatoes like french fries, partially fry and then freeze. Finish them by refrying or baking.

You could chop them and make a "syrup" of butter, brown sugar and karo syrup (or molasses) and can them or freeze for a quick sweetpotato casserole. You can use the puree in recipes like pancakes and such. I'll see if I can ind some links and post them.
