I cook supper every night (except one), like most of y'all probably do. I can't figure out what kinds of desserts to make, as I'd like to have something every night too. It seems like I always have prepackaged cookies around, but I'd rather home-make something- small enough not to have much leftovers but better than prepackaged cookies. What do y'all do?

ohhh you ladies are making me hungry!
Anyways, we had a great fruit treat at school today which is simple and would make a great dessert....chopped apples and vanilla yougurt.
Just wanted to jot that down while I was thinking about it!

hehe Libbie, I'm there with ya! That sounds awesome. I do that sometimes too. I really like the Dove Raspberry chocolates, and mmmmmmmm a nice nice coffee. yum, or even hot cocoa, I like Firesidecoffee.com the raspberry flavored with the dove chocolates! :) (yes I get the sugar free ones!)

I would be in heaven every night with a cup of coffee and a small, but exquisite, square of the darkest chocolate. And...now that you mention it...why am I NOT doing this?!?!?! Having a 3-month-old and a three-year-old, I'm not worried about the coffee keeping me awake. I can sleep with my eyes open these days!

I like pudding and jello salads. In fact, I own a book called Dessert Every Night. lol It's diabetic desserts and very tastey!

I thought of something else I do -- make a cake and freeze half. Since I like layer cakes, I take one layer and freeze it, then split the other layer and make half a layer cake by layering one half on the other and frosting it!

We don't have dessert every night but I do make it often as my guys have sweet toothes! Pies, cookies, tarts, individual cakes, brownies, carmel apples, pumpkin cheesecake are fall favorites. If you make a big batch of something you can always freeze some for other nights and repurpose. I always have pound cake or angel food cake in the fridge. Drizzle a little choc.sauce, or fruit topped with whipped cream and you have quick and easy dessert. It also can be used for tiramisu. Ofcourse you must go for a walk every night when you eat this stuff!

Chocolate chip cookie dough keeps for several days - you could make some, refrigerate the dough and cook a few as needed. We don't have dessert most nights...

I like to have little things that hold well. Meaning cookies that can be kept in tins for long periods of time like shortbread, and served with tea or hot chocolate. Also pound cake can be frozen in slices, as can poppyseed cake and most carrot cake recipes. I like to make those in loaves or bundt pans and not worry about using them up fast.

One that I really like is to take a banana, slice it in a bowl, add a drizzle of hot fudge, and a tiny bit of ice cream or whipped cream. It's sweet, it's fruit, and it's not too filling.

Ice cream holds a long time, so you don't have to eat it every night.

You can also make ice cream sandwiches with some good homemade cookies and leave them in the freezer.

I like a piece of really good dark chocolate sometimes, too.

I probably only eat dessert one or two nights a week. I have enough extra pounds that I should kiss it goodbye forever! *sigh*

Even easier are those frozen tart shells, cool whip and individual pudding snacks... After defroting only the shells you need, just fill those with the pudding, top with cool whip and voila! Super fresh little pies! That way, if you have different flavors of pudding, you can make the pies fresher and everyone can have a flavor they like. Plus it saves on refrigerator space, because there are no leftovers...

Smoothies would be good too. Yogurtfruit smoothies. I've seen a lot that are just fruit juice and ice, but that is not a smoothie to me. Or even icecream/fruit milkshake? Those are easy. I have gotten in the habit of preparing a lot of things the night before. After dinner when the dishes are still not done yet, I make a little more mess and make tomorrow's meal or desert. Then when tomorrow comes, I can just throw it in the oven or crockpot, and make a few quick side dishes. You could do the same with deserts. Maybe after the kids are in bed, or during commercial breaks you could through some dough together and leave it in the fridge overnight, then before dinner, plop your cookies on the pan and voila! after dinner cookies are still warm.

My favorite is chocolate puddin pie. EASY. Get a graham cracker crust, make pudding, fill crust, let chill. Add whip cream if desired. It's so fast and simple, and you could experiment with different flavors of pudding/different crusts and mix them and match them with fruit mixed in the pudding, or serve on top!

I would recommend fruit and cheese, or something light, esp. if you do something every day. If it's just you and no kids, you might just try a nice decaf flavored coffee and a cookie.

There's always jello or pudding, some whole grain dessert bars made with fruit and grains, a small bowl of homemade granola and yogurt or just a bowl of mixed berries and fruit.

Of course, if you have goats or dairy cows, how about a small cup of homemade ice cream? Or homemade ice cream sandwiches, made from a scoop of ice cream and two cookies.

My aunt used to serve homemade popsicles made from fresh juice and yogurt.

We also got one of those small snow cone makers one year and during the summer made slushies using shaved ice from the snow cone maker and fruit juice. Yummy!

I'm a once-a-week dessert person (Sabbath only), but I sure LIKE the idea of desserts every night. On the weekdays I do manage a dessert it's because I was making a dinner that made the dessert a snap. For instance, on pizza night, I use a little leftover dough for a berry tart. It's no extra effort because I've already got the dough made and the oven on. Or if I make chicken potpie, I make a dutch apple pie with the leftover crust. You get the idea. The drawback is that the dessert tends to taste exactly like the dinner :)

If your kids will stand for it (mine does for right now, but she's still too little to know better) fruit and a little fancy cheese -- strawberries dipped in mascarpone, for instance -- makes a dreamy no-cook dessert.
