Hi girls -

I really need a homemade "Cool Whip"-type whipped topping recipe. Have found several online, but am wondering if any of you have a tried-and-true recipe of your own?

Also, a few of them require Knox Unflavored Gelatin... I can substitute for that with MaryJane's ChillOver Powder, right?

I found this recipe in Midwest Living magazine for a healthy whipped cream recipe:

1/2 cup heavy whipping cream
1/2 cup nonfat Greek yogurt
a tablespoon or two of powdered sugar (to taste)

Make with an electric mixer until soft speaks form. Fluffy & a little tangy, it's great for topping cakes, brownies or fruit and keeps up to 3 days in the refrigerator. It has more protein & less fat then traditional whipped cream & less chemical than the frozen stuff!

That sounds yummy! I'll have to try it next time I get to the grocery! Thanks for sharing.

I think the article said they were illegal because they did something to the food to make it unsafe. I'm not sure if it was the radiation or the food's reaction to it. I'll have to see if my husband remember where the article was.

Oh my goodness, Heather - it's yummy! My girlfriend makes it on Valentine's Day, and somehow a big honking serving of it winds up on our dessert plates! Here's her recipe:

Laura’s Italian Love Cake

Cake:
1 pkg. chocolate cake mix
2 lb. ricotta
1/4 c. sugar
4 eggs
1 tsp. vanilla

Frosting:
1 pkg. chocolate instant pudding mix
1 c. milk
8 oz. carton Cool Whip

Preheat oven to 350 degrees.

Prepare cake mix as directed; pour into greased and floured 13 x 9 inch pan.

Mix cheese, sugar, eggs and vanilla until smooth. Spread cheese mixture on top of cake batter.

Bake 1 hour.


When cool, whip together the frosting ingredients until light and fluffy. Frost right in pan.

Refrigerate leftovers... that is, if there ARE any! ;)


I never heard that about microwaves being illegal anywhere - WOW! Wonder what's up with that? WOW!!!

I'm not sure what the Italian Love Cake is. I would say that if it's on top and it's going to be eaten right away or put in the fridge to try it. I've never used it for anything but hot cocoa and pumpkin pies. I don't know how it would work if you were to try and put it on the cake then take it some where to be eaten some time later.

We don't do the microwave thing either. I read that they are illegal somewhere - maybe Russia?

I make that, too, Heather, only with regular sugar, not powdered - but you're nephew is soooo right!!! It's the best!! :) It's pretty much all we use! But the thing is, there are a few recipes we have that actually call for Cool Whip... I'm not sure that regular whipping cream can be substituted. I've been wanting to make Italian Love Cake, and the topping is made with Cool Whip. I thought it might be a good idea to make it homemade than to buy it from the store. There are good-looking recioes for it out there, but I don't know anyone who has ever made it. Plus I've seen that a lot of them that require a microwave - we don't do the microwave thing. I wonder if it would work okay if I just make the regular whipped cream...

I use heavy cream and add powdered sugar and vanilla extract to taste. Just whip it with the mixer. Even my nephew said it's better that coolwhip!
