Posted - Nov 05 2013 : 06:29:20 AM We had a wonderful ham for dinner last night, but the carnivores in our family only ate 1/4 of it. And they are piggies!
I'm trying to figure out a good soup to make with the bone and they don't like split pea.
Any other suggestions for soup or good ways to use up the leftovers?

Posted - Nov 08 2013 : 3:46:14 PM So, I made the Party Potatoes and Ham for dinner last night. Ended up having the neighbor boys stay and they loved it to! All gone.
Tonight, I'm making the ham and bean soup. The house smells so good now and the ham is all used up.

Posted - Nov 06 2013 : 2:12:54 PM We make Ham and Bean Soup because we don't like Pea soup either.
Ham & Bean Soup
1-½ pounds smoked ham hocks or 1 ham bone 1-pound small white beans (Anasazi beans are best) 3 sliced or chopped carrots 3 stalks celery sliced or chopped 2 medium onions, chopped 2 bay leaves Salt and pepper to taste Water to cover
Put all ingredients in a stockpot. Bring to a boil. Reduce heat and simmer partially covered for 3-4 hours (possibly more if beans aren’t tender yet). It will get very thick; add water when you think it needs it. Somewhere down the line remove the ham hocks from the soup, and cool them, Cut the meat off the bones, discard the fat and return the meat and bones to the pot. When you are ready to serve, remove the bones and bay leaves and serve. Serves 6.
I have also used leftover ham to make Chicken Cannelloni. If you are interested I will see if I can find the recipe :)

Posted - Nov 05 2013 : 4:26:38 PM We make fried ham and Swiss sandwiches. Just throw the ham in a pan and fry it up, then add Swiss on top. Very yummy! My mom makes what we call Holiday bean soup with about 3 or 4 different kinds of beans and ham. She just throws it all in the crockpot for an hour or two. I'll have to ask her for the exact recipe!

Posted - Nov 05 2013 : 3:10:14 PM Pinto beans or navy beans with the bone, definitely!! But I also can my leftover ham for later use. I just cut up the leftover ham and put it into pint jars and then evenly distribute the drippings between jars, filling the rest of the way with boiling water. Then, I pressure the jars for 65 minutes on 10 lbs. What is wonderful about that is that I can then open a jar for Michele's suggestion of scalloped potatoes, or I open a jar and throw the ham in the food processor with a little mayo, mustard and pickle relish to make deviled ham. My husband inhales that on crackers or on a sandwich. I've even opened a jar and put the contents into a skillet in the morning for ham to go with eggs, grits and biscuits and gravy. So versatile. I always buy a huge ham so I'll have plenty of leftovers!! :-)

Party Potatoes and Ham 1 pkg of hashbrowns, frozen cubed potatoes, etc 32 ounces I think 1 12 oz tub of sour cream 1 stick of melted butter 1 can cream of mushroom or cream of chicken soup Chopped up ham, I use what I have, sometimes more, sometimes less Salt and pepper 2 cups grated cheddar cheese Mix all in large casserole dish. I always pour about 13/4 cup milk all over the finished dish before I bake it. If I do not, I thi nk it is to dry. Can leave out the vutter if the milk is used. |

Posted - Nov 05 2013 : 06:53:01 AM I make cabbage soup with the leftovers. Even family that doesn't like cabbage loves this soup. It's so easy. I chop up 1/2 or whole (if small)head of cabbage and saute with onions and a little chopped carrot and potato, add enough chicken stock to make it 'soupy'. Then I add the hambone and leftover diced ham and simmer until all is tender and tasty. Serve with some hearty bread and butter and it's real comfort food. Yum! (oh yeah, don't forget to remove bone. lol)

Posted - Nov 05 2013 : 06:36:04 AM I do ham sandwiches and cook dried beans with the bones or slices of ham. Don't salt the beans or use too much ham or the beans will be too salty.
