I want to make a starter for friendship bread, and I have a recipe, but I haven't made this before and I have a question. The recipe doesn't say WHERE to leave it while it does whatever it does. Do I leave it out on the counter or put it in the frig?

Thanks-
Kim in NC

don't be nervous about the starter, its really very simple. Here is a sample to use if you want.
1 package active dry yeast
1/4 cup warm water
3 cups flour (divided) use 1 cup at a time
3 cups white sugar (divided)
3 cups milk
disolve yeast in warm water to proof about 10 minutes or so
use a 2 quart container of glass or ceramic to combine everything in.
so combine 1 cup flour, 1 cup of sugar & mix well so flour doesnt lump when you pour in the milk. Now SLOWLY stir 1 cup of milk and the yeast mixture. Cover loosly and let it stand until it gets bubbly. THIS IS DAY 1
DAY 2-4 just stir it once, maybe twice but thats all you need to so.
DAY 5 stir in 1 cup flour, 1 cup sugar, 1 cup of milk
DAY 6 to 9 stir only
Day 10 stir in 1 cup flour, 1 cup sugar & 1 cup of milk
remove 1 cup of starter to make your first bread, give 2 cups away to friends. The 1 cup you have left, store in fridge or start all over again.

Liz- I can type my recipe in this afternoon, if that will help. (Have to do short spurts of online while dd is in school since it ties up the phone line).

I've only used the one without yeast and yes left it on the counter to do it's "thing".

My Gramma used to make a great Amish Friendship bread, would anyone like to post a recipe for me? My brother loved it! She used to send a loaf to him when he was at college and I would love to start making it for him when he gets back from his deployment in about 10 days or so. Detailed and extra advice is very appreciated with a recipe, I have never made a bread with "starter". Thanks Gals!!

I have two different recipes for the starter...one with yeast and one without. Does anyone know which one works better?

On the counter is fine, I've never put mine in the fridge. I'll be getting one later this week, can't wait to make the cinnamon bread again, yummy! Welcome Kim, enjoy your starter!
