Posted - Oct 29 2013 : 08:29:06 AM I love to have homemade bread but I can never keep it fresh for very long. One day tops. If I put it in a plastic bag it gets soggy, in a paper bag it gets stale. Anyone have any suggestions?

Posted - Oct 30 2013 : 5:33:30 PM I make mine with honey, it seems to taste fresher longer. I also let it cool completely, and leave it on the counter until the whole outside dries out. It needs to make a crust on the whole loaf. And don't cut them until they are cool. If you do cut one plan to eat it in just a few hours, because if you cut a loaf while too warm, it will get soggy in the middle. Just as soon as the loaves have dried out enough on the outside I put them in gallon food storage bags, the kind with twist ties, squeeze out the air, and put them in the freezer.

Posted - Oct 30 2013 : 10:50:06 AM Hey, thanks Linda and Sharon for the suggestions! I betcha it is getting soggy from bagging it too soon. Never thought to leave it out for 5 hours. I'll try leaving it out longer and storing it in the fridge. Although, I really don't need the temptation of seeing fresh baked bread on the kitchen counter! Lol Oooh bread is good!!!

Posted - Oct 30 2013 : 09:09:31 AM I'm thinking (like Linda) that the bread has not had enough time to properly cool and is retaining condensation.
I have noticed that if my home is too warm (we have a woodstove) it effects the bread and it goes bad quicker. Maybe try refrigerating it after it has cooled properly?

Posted - Oct 29 2013 : 6:59:52 PM Diane I have been baking honey whole wheat for about 32 years. I have never had it get soggy in the baggie before. Homemade bread does not stay fresh very long because of not having preservatives. One thing I do is let the bread cool on a rack for at least 5 hours so you know there is no heat at all left in the bread. I just lay a dishtowel over it while its cooling. Then I just put it in a gallon plastic bag and have not had any problems with sogginess. Maybe you are bagging it too soon and its not had time for moisture and heat to leave. Just a thought. Hope someone else has some helpful suggestions to why this is happening to your bread.
