Posted - Oct 13 2013 : 11:49:10 AM You're welcome. I love having these quarts in my cupboard. Whenever people show up last minute to visit, I combine refrigerator pie crust with this canned apple pie filling and some crumbed topping. An hour later, pie!!!

Posted - Oct 12 2013 : 10:51:58 AM Here's MJ's apple pie filling: 18 lbs. red=skinned apples, Cameos, Gala, Braeburn, Jonagold 1/2 cup lemon juice 4 1/2 cups organic sugar 1 cup cornstarch (I've used Clear Jel) 2 teaspoons cinnamon 1 teaspoon salt 1/2 teaspoon nutmeg 10 cups water 3 Tablespoons lemon juice 7 wide mouth quart canning jars Wash apples,peel, core and slice them. Put apple slices in a large bowl of water with lemon juice - 2 teaspoons lemon juice for every 5 cups water. In a large pot, combine water, cornstarch, cinnamon, salt, nutmeg and water. Bring to a boil, stirring constantly for approximately 15 minutes, or until thick and caramel colored. Remove from heat and stir in 3 tablespoons lemon juice. Ladle apple slices into sterilized quart jars. Ladle hot liquid over apples to within 1/2 inch of jar top. Process quarts 20 minutes in a boiling water bath. Yield: 7 quart jars. My directions for baking these pies from the filling is 400º for 55 minutes. Check you oven the first time you do this. I found this in MJ's Ideabook, Cookbook and Lifebook. Page 135 Enjoy!
