Hi,
I figure I better get all the basil out of my garden and preserve it. We had a really good summer, lots of sun, so I have lots of basil. Does anyone have some good recipes or ideas?

Thanks to all for your suggestions. I found an old recipe to make pesto. I might try that. I bought a spaghetti squash. Can you imagine the strands smothered in pesto?

I like putting in ice cube trays with water, freeze, pop out & put the cubes in a freezer bag. It retains the fresh quality, which I love in the winter.

You can also put them in ice cubes with water. I dry mine.

I read some where ( tho' I can't remember where that where was lol) about chopping up basil leaves, coating them with olive oil and freezing the leaves in bags. I was planning on doing that tomorrow when I got back from market. I'm not sure what else to do with mine, it just would be so nice in the middle of winter to have basil to use. I'll see if I can find the recipe and post tomorrow.
