Ever invent something that was just too good not to share? Try this one -- I played around with an old recipe last week and came up with this. SO YUMMY. By the way, a Kugel is a type of Jewish "pudding" -- anything that is baked and contains a lot of eggs. This one is sweet (some are savory), and my 2 year old went crazy for it.

Pumpkin Kugel

1/2 cup butter or margarine
1/2 cup brown sugar
3 eggs
1 tablespoon lemon juice
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 cup flour
1 tsp baking soda
1/2 tsp salt
2 cups or so pureed pumpkin

Cream together butter and sugar. And eggs and lemon juice, beat until fluffy. Mix dry ingredients seperately if you into that kind of thing, stir into egg mixture just until combined. Add pumpkin puree. Bake at 375 for 45 minutes or until pumpkin is set. Devour.

Sounds wonderful! I've never had pumkin kugel before, so I'll have to try. The women in my Mom's family were German-speaking people that lived in Russia before comming to America, and Kugel was one thing I remember from my early childhood. YUM!!!

Noodle Kugel is one kind of kugel -- it can be either sweet (usually with fruits) or savory (usually with lots of pepper). But you can make bread kugel, carrot kugel, broccoli kugel, spinach kugel, apple kugel, potato kugel.... the list goes on and on. Basically, if it's baked and has lots of eggs in it, it's a kugel ;)

I thought kugel had noodles in it. I guess it doesn't have to? Sounds yummy

Robin , that sounds wonderful . I love pumpkin and anything "puddin'" or custard like in nature. Next time I shop I will definately be making this! Thank you so much for sharing it with us. Angela
