I've been wanting to make homemade vanilla extract for a while and finally started the process yesterday. Instead of reposting everything and pics here, i thought i'd just give you my blog link where it's all posted. I'm real excited about it. Has anyone else done other extracts? I'd love to hear!

I've read that it can be made with skinless almonds (blanch the almonds over night in cold water) . Has anyone done this and hoe did it turn out?

I wanted to update everyone on the result of my vanilla extract.
It came out great! Well, it came out delicious! The color is a dark rich amber, the aroma is intoxicating and the flavor good. I've been using my vanilla extract in homemade hot cocoa and in cookies.
I am going to try other extracts too. yum

Posted - Oct 17 2013 : 12:04:35 PM You girls have inspired me to jump on the homemade vanilla extract band wagon! I mixed up a batch a few days ago and bought some small bottles so that I can eventually give some as gifts for Christmas. I can't wait for my first "shaking day" - that'll be the most fun I've had with a bottle of vodka in a long time. :)
I'm REALLY intrigued by the coconut extract. About how much dried coconut do you use per liter of vodka?

Posted - Oct 09 2013 : 01:55:36 AM Yup, I've done vanilla extract before. Actually have a few new batches I need to decant and strain here (including some made with raspberry vodka and peach vodka and bourbon) when I have a chance.
I've also made coconut extract. I needed some for a recipe, and the only crap I could find in the stores had propylene glycol. That wasn't acceptable to me, so I decided to go make my own with the dried, unsweetened coconut and vodka I have on hand. It's about time to decant that one, too. Yum, coconut chocolate scones are in our future.

Posted - Sep 16 2013 : 12:21:44 PM I've done vanilla, lemon and orange. Someday, I'd like to try peppermint. And I agree with everyone else, you can NOT beat the flavor! Plus, I can make organic vanilla (beans and all) by the quart for what I'd pay for one of those puny bottles. This is a good thing for those of us who bake a lot!

Posted - Sep 16 2013 : 07:03:57 AM Connie, I made homemade vanilla extract this year, and it is delicious in my recipes. I used it for goat's milk ice cream, and the family raved over the flavor. It's so easy to make.

Posted - Sep 14 2013 : 06:53:13 AM I decided to try bourbon to make my extract too. I have a bottle of vodka vanilla and bourbon vanilla and I will have to say that the bourbon vanilla is pretty rich! I used some in pancakes the other day and oh brother. :-)
