Maybe it would be a neat idea for whenever we're cooking something really great for dinner to post the recipe on here for others to get ideas or advice. Even if it's something we prepare the night before. I've been so inspired by all of the wonderful women on here that I've been going crazy in the kitchen!

Yesterday is already a dream and tomorrow is only a vision, but today well-lived makes every yesterday a dream of happiness and every tomorrow a vision of hope.

Tonight it's lamb chops - really simply prepared by rubbing with olive oil, garlic and sprinkling on crushed rosemary then broiling under broiler for a few minutes on each side - butternut squash and french bread. There are so many good recipes here - I'm going to have to make it a habit to check in the mornings!!!

I threw 3 split chicken breasts in a pot atop the stove, with some chopped onions, olive oil, garlic powder, BarBQ sauce, and strawberry jelly and let it all cook in the pot. When it was done, it got a squrt of ranch on top of each and a melted piece of baby swiss. It started out as a concoction, but DH loved it! On the side was baby limas and acor squash and hawaiian sweet bread. It was a yum meal!

Jeny that mexican chicken sounds great. We have a REALLY QUICK AND EASY recipe that we use.

1 small rottisserie chicken from the Grocery (Or 4 chicken breasts)
Pull all the meat off the breast and thighs kindof shredding as you go. My Richie likes to eat the legs and wings so I save those for him.

Make one batch of white rice. (1 C. dry rice, 1 3/4 C. water)

In a baking dish combine Rice, Chicken, 1 lg can cream of Mushroom soup, and 1 can Rotel (I drain mine to get most of the liquid out). Stir well and press into baking dish. Sprinkle cheddar cheese on top and put in oven until cheese melts and it is heated through.

Since I usually make this with warm rice it only takes about 15 minutes in the oven to heat through. It does freeze well but usually takes about 45 min to an hour to heat when it is cold (after thawing).

I serve with black eyed peas and corn bread.


As far as tonight is concerned I think it is going to be breakfast for dinner. I have had this killer migrane for three days and while it is starting to wear off I now have the nausea again so quick comfort food sounds good.

Tonight is my grandsons Birthday, so no cooking for me, we will be at my daughters house, tomorrow night is roast beef sands, and salad and carrot cake. We have the best deli right near here with top of the line meat, so I like to get their roast beef sliced real thin, some of that good beef juice and have sandwiches on a big ole roll.

It looks like good ole bean soup (navy & pinto mixed) in the crock pot with corn bread made in a cast iron skillet. The only way I know how to make it. I have a new litter of Miniature Schnauzer puppies coming any hour so I will be busy today, tonight, or who knows.

ohhhhh .. we are dining "Italian" tonight. I have a doc appointment an hour away in Louisville today .. we always stay in town for dinner and a movie. We discovered a cute little 'historic district' in Louisville with great shoppes and restaurants. Honey Hunk's favorite ethnic dish is Italian .. sooooo .. that is surely where we will have dinner tonight before the movie.

Can't help with any recipes tomorrow night either .. we are going to a play (again an hour's drive away) .. a FABULOUS 'professional' group of actors at this theatre (Kentucky Repertory Theatre) .. google it! we are sooooooooo lucky to have this near us .. and we take country back-roads to get to it .. a small town! there are several yummy COUNTRY RESTAURANTS along the way .. soooo .. that is where we will dine tomorrow night! xo

Mexican Chicken
4 chicken breasts (poached in salted water and cut into large chunks..like a size that would take two bites to eat)
1 dozen corn tortillas (flour will work too, or fritos or tortillas chips in a pinch) cut into wedges
1/2 tsp cumin, 1 tsp garlic salt, 1 med white or yellow onion, chopped fine
1 can cream of chicken soup
1 lb. sharp cheddar cheese, grated
1 8 oz jar salsa
1 4 oz can of diced mild chiles ( I use ortega)
Sour cream, olives, green onions
using half the tortilla wedges line the bottom of a 13X9 baking pan, spread half the chicken evenly on bottom in a layer.
melt the cheese, add salsa, ortega chiles and onion
pour half of sauce over chicken. Add some sliced olives if desired, and another layer of each item. Then top with dollops of sour cream and sprinkle with more olive slices and sliced green onion. sprinkle with cumin, and garlic salt over top.
bake at 325 covered for about 45 min...uncover and bake 10 min more.
Not low fat for sure....but really yummy!

I made Four Cheese Lasagna. It was oh so deliscious, so creamy and Italian. Did I 'forget' to mention that it was made expecially for my husband by Hamburger Helper?

Tonite is soop nite! Butternut squash/white bean & a cream of (raid-the-garden) vegetable for the fussier ones that don't like squash. Cheese, basil & fresh tomato melts to fill up the guys. Done deal!

Hmmm...I don't know! I have a couple pounds of ground beef thawed, some mushrooms to use up...maybe beef stroganoff!

Oh Bramble..what time is supper...that sounds wonderful!!! I am making B.L.T.s and tomato soup tonight I have to be rushing out right after supper to make rasberry jam with 12 adn 13 year old girls at the church so I had to do something easy. Tomorrow night is Mexcian chicken..a layered dish that I love..sort of like mexican lasagna!

While I was hemming and hawing this morning about what to make for dinner, my best friend called and said she had made a big pot of beef, mushroom & brown rice soup - and would I like her to bring it over tonight with a crusty loaf of bread? Now you know why she's my best friend!!!

Okay- here's tonights dinner- Chicken with Asparagus

Chicken breasts precooked and sliced
asparagus, I use the tips but you could chop the stems also
4-5 lemons juiced
1/2-1 c.chicken broth (non fat, low salt here)
(Option: 1/2 c.broth, 1/2 c. white wine also)
onions, sliced into 1/2 rings
yellow and red peppers, cut in strips
garlic 2-3 tsp minced or 1-2 cloves crushed
thyme, rosemary, basil,oregano,s + p
Tomatoes (any works as long as they are sliced or diced, cherry tomatoes too but you have to cut them or they will POP!)
EV Olive oil

In heavy stove top sautee/fry pan: heat olive oil, garlic ,pepper and
onions strips until cooked through. Firm not mushy.
Add chicken and asparagus tips to the pan, on low heat and cover with lemon juice and chicken broth.Stir in tomatoes for final 5-10 minutes to heat through.
Serve over cooked egg noodles or your favorite pasta. (This seems to have become a favorite dinner with 13 year old boys ...and 47 year old husbands!)
Estimated time of prep: 20 minutes, cooking time : less than 1/2 hr.

Yummy-I need to make a list and get cooking. Not sure what's on for tonight, but last night was chili. I make it fast and very mild and a small amount-you can double it easy.

1 lb hamburger fried with onions.
1 can cooked tomatoes with basel, oregano, and garlic already in them.
1 can chili beans
About a tablespoon of catsup and a little chili powder-I taste as sprinkle-best to add it very slowly.
Cook the tomatoes and beans on med stirring while hamburger cooks and then add hamburger-simmer until all looks and smells yummy! If you want it a little saucier-a bit of water-1/4 cup.
I think that's it.

Tonight will be chicken fried steak with mushroom gravy, mashed potatoes and greenbeans. Not too healthy but Richie loves the stuff!

Well, we had a frozen pizza. That's because I didn't have any barbeque sauce. Well actually I did; a brand I bought because it didn't have high fructose corn syrup in it like the kind we usually buy. But I wanted the stuff we usually get so I could make these chicken packets. You put a chicken breast in the bottom of a piece of aluminum foil. Salt and pepper to taste, glurk with barbeque sauce, and cover with lots of sliced potatoes and onions. Salt and pepper the veggies to taste, maybe throw in a clove or two of garlic. Fold up the foil to make a packet on a cookie sheet, and bake until the chicken's done, about 45 min to an hour in a 350 oven.

But while I was out and on my way to the store, I thought I just might stop by the cute little shops that sell antiques and country goods in that town. I found lots of cute candles with yummy scents for fall. I was looking for a nice old box to put the dog's toys in, but I never found one that thrilled me. By the time I got back with my barbeque sauce it was too late to eat chicken, so we ate pizza.

But thanks to the candles my house still smells good.

Wow...all those sound so good. I have some more interesting things on the menu for the rest of the week, but tonight we are having sloppy Joes..1/2 beef 1/2 elk burger, and some home canned peaches.

I made Sambar Curry (south indian style) and Basmati rice. YUM.

Sambar Curry:
2 cups Chana Daal (yellow lentils or yellow split peas)
1 can tomatoes with mild green chiles -- or 2 cups canned tomatoes and one chile pepper.
1 onion, chopped
1 potato, cubed
2 tablespoons sambar spice blend (sold at Indian groceries or make your own: 4 tsp. coriander, 1 tsp. cumin, 1/4 tsp. cayenne pepper, 1/4 tsp. black pepper, 1/8 tsp. asafetida, 1/4 tsp turmeric)
1/4 tsp fenugreek seeds
1/4 tsp mustard seeds
1/8 tsp asafetida
1 tsp tamarind puree
1 tsp salt
10 curry leaves or two bay leaves
Cilantro to garnish if desired

I'm lazy -- I stick it all in a big pot and bring it to a boil over high heat, then simmer the rest of the day until dinner time, then garnish with the fresh cilantro. You can saute, etc. if you have more energy than me :) If this is you, heat the fenugreek, mustard and asafetida in a little vegetable oil until the mustard seeds start to pop, then add it to the pot (that's the authentic Indian way).

I popped a big ole chicken roaster in the oven this afternoon, going to have some mashed potaoes and gravy, some rolls, and choc. cake. Tomorrow I plan on wearing very baggie clothes.
