Hi Ladies,
I would like some ideas of how to use kale and spinach that I have quite a bit of in my garden. Any ideas? Thanks,

I have now tried the kale sauted as Lisa and Kristen have suggested, I also made chips in the oven. I loved it each way, but my husband only ate some to be polite, he doesn't care for it, especially the chips. I'm going to get a ham one of these days and follow Nini's recipe, and make calzones as well. I will also try the soup Lorena, it sounds pretty simple and good. I made a pizza last night and put quite a bit of spinach on top along with all the regular toppings, it was good too.

Portuguese soup also called kale soup. Boil some potatoes and carrots in water with onion. When cooked through drain off some of the water mash the carrots and potatoes in the remaining water. Don't add milk or butter. Add 2 cups if chicken broth and sliced spicy sausage like chorizo. You can just use a basic smoked sausage not breakfast sausage. Tear kale into bits but not the main rib.and cook until kale is wilted. Yum.

Saute some chopped walnuts, dried cranberries and garlic for a few minutes, then add chopped kale. This is SO good!

I also throw some in smoothies, soup, stir fries, and frittatas.

Shannon - I like to make both like Lisa does! Yum!

My sister-in-law also taught me to boil kale with ham. You just layer as much as you want in the bottom of the pan, put your ham on top, circle the ham with peeled potatoes, cover with water, and boil 'til done. It's very good!

Kale is also really good when frozen.. then you can just take it out and toss some into your favorite soups or sautee it as a side dish over the winter.

I also love a good spinach salad with tomatoes, red onion, grilled chicken and feta... SO good with homemade Ranch dressing!

I use spinach quite a bit - we make spinach pies (kind of like calzones) with pepperoni, mozzarella and sautéed spinach. I also layer it in baked pizza pasta (even the kids who don't like green veggies will eat it!) or on pizza.

Also great the same way tossed in pasta!
