Hi girls!

SO excited! Just came in from the garden and have about a dozen huge hot banana peppers for dinner, with tons more on the way! I usually make my mother-in-law's recipe for Lamb Stuffed Hot Banana Peppers, and then I can the rest. This year, however, I've got an abundance coming in already - and you know how the story goes - these are the gifts that keep on giving! YUM! The problem is, I don't really have any other good recipes for them! SO, will you please share your favorite banana pepper recipes with all of us?

Thanks so much!

Nini

i used to clean the peppers, then put them a clean jar, pour vinegar over them, and let them sit. makes a wonderful splash of hot flavor, on greens, meats, etc.

Tina! Sharon! My goodness those sound wonderful! Thank you!!! Sharon - my Mom will go nuts over that mustard! I am definitely going to make it! Thank you!!!

Lisa - I don't know if it's possible, but if it's possible, I don't want to know! LOL!

A dear friend emailed me yesterday. Her hubby is famous for his barbecued hot peppers. She's going to mail me the recipe, so when it arrives, I'll definitely share! YAY!

Hugs -

Nini,

I grow Hot Banana Peppers just for this recipe:

Banana Pepper Mustard

1qt. Prepared Mustard
1 qt. (4 cups) Cider Vinegar
9 Tbsp. Cornstarch
6 Cup Sugar
3 cups finely chopped Banana Peppers

"REMOVE SEEDS OR MUSTARD WILL BE VERY HOT"

Combine Mustard, 3 Cups Vinegar, Sugar, and Peppers in a 4qt. Dutch Oven or stock pot..
Bring to a Boil over Medium Heat, (stirring almost constantly).
Mix Cornstarch with remaining 1 Cup of Vinegar.
Slowly Stir into Mustard Mixture until thickened.
Remove from Heat and Seal in Hot Jars.

Yield: about 12 (8-ounce) jars

This is great for pretzel dipping!

boneless/skinless chicken breasts, pan fry in a little seasoned (to taste) olive oil, till almost done...slice peppers long ways into 2 - 4 strips, add to oil mix till just soft, drain most oil, lay pepper strips on top of each breast, add slice of provalone cheese on top, continue to heat on low, till cheese just starts to melt, grill sourdough bred, either make open sandwichs, complete sandwhichs, where you can add tomato slices, or no bread at all...

I found this one online last night - it's so good. Not exactly healthy for you, but a great one for an appetizer! I didn't save the link because it was so easy, so I cannot properly credit the person who posted it - I'm sorry!

12 Hot Banana Peppers, sliced in half lengthwise, cored and seeds removed
1 lb. bulk hot sausage
2 cloves garlic, minced
2 8 oz. packages cream cheese
2 cups shredded mozzarella
2 cups bread crumbs
garlic powder
red pepper flakes
Oven to 350 degrees

- Lightly oil a 9 x 13 baking dish.

- Brown sausage. Drain fat well.

- Add minced garlic to sausage. Sautee lightly to flavor the meat.

- Add the cream cheese. Stir until mixed well. Remove from heat.

- Stuff each pepper half with mixture. Place in prepared baking dish.

- Top stuffed peppers with mozzarella, then bread crumbs. Use it all.

- Sprinkle each pepper with garlic powder (or garlic salt - your preference).

- Sprinkle with hot pepper flakes.

- Bake in 350 degree oven for about 15 minutes until cheese is melted.

YUMMMMMMM!

I could only eat one - very filling, and very, very hot. I sent some to the neighbors - they loved them. My hubby ate about a half dozen and practically begged to take the rest to work with him for lunch. So far - they're a hit!

I will pull out my mother-in-law's recipe and post it soon. It's very easy, very yummy, and not nearly as calorie-filled! ;)

Please do share your recipes, girls!!!

Hugs -

Nini
