 Has anyone ever heard of a bread

that has fruit cocktail in it. I use to make a recipe of the Amish friendship bread using it and I can't find a recipe online or anywhere that uses it as a last ingredient in the part where you finish the days with the starter and make the actual bread part. Would anyone know of a recipe like that? I'd like to make some for my sister when I go to see her.

Nini~ I can see how those would work well. They all ferment quickly. Thinking hard cider. Maybe that is why they are suggested as a substitute. I am going to give it a try with grape or apple juice. I won't be able to do this right away but I do want to see how it works.
So glad you all have posted on here to help me find this.

I was just reading this thread.
A friend of mine gave this recipe to me many years ago like maybe 28 years ago. If I remember right you want to use the brandy its important to this recipe. I remember I gave this recipe to a friend and she did not use the brandy and it went bad on her but not sure if that was why but thought maybe it was.
I have not made this recipe in many years and it really gets super fermented.You can try it without the brandy but I always used it. I don't drink alcohol but I was afraid not to put it in.Its alot of ingredients and wanted to make sure I followed the recipe to the letter the first time. But after it ferments believe me it smells like fruit alcohol.

Nini I am going to do some research myself on this. You are probably right and could leave it out. I am curious if its left out how well it will work.

Good luck with your recipe and hope it turns out for you. I think I am going to dig up my old recipe out and maybe try my hand at this again. Its been seems like forever since I have tried this. So good to see and old recipe on MJ and hope everyone writes in with how theirs turn out and what they think of the taste of the fruit bread. Good luck and happy baking.

"Brandy is another alcohol commonly found in recipes, and there are several different fruit juices that can be used to replace it. Water is a common substitution but, depending on the recipe, cherry syrup (from canned cherries), white grape juice, and apple juice can be used." http://mideastfood.about.com/od/tipsandtechniques/a/alcohol_subs.htm

Now I'm wondering how necessary the brandy is at all! If it's only necessary for flavoring, I'm betting that real vanilla might be a good substitute! What do you think?!

Darlene - I do think it is different than the original bread, but it sure is a yummy option! :)

Sharon - I'm going to try to find an alternative for you. I know there is always brandy flavoring, but I don't think it will assist with the fermentation at all. I'll let you know if I find anything out. We have a few friends who might know. :)

This recipe is different than the regular friendship bread isn't it?

Thanks for the input on the brandy. I figured it was needed for fermenting, I was just hoping for another way to ferment (Personal conviction with the alcohol)

I don't have brandy, either, Denise - I was thinking maybe there is a nip size available, and that it might have just enough to meet the 6 tablespoons needed... we'll see! :)

I am assuming the brandy is for fermentation and as the stuff sits I believe the alcohol would dissipate. I know the fruit will cause fermenting because of the sugar content.
Can't wait to try this, Nini. I have everything but the brandy so I may see if there is something I can substitute.

Sharon - I honestly have no idea... All I know is that it's needed for the original starter batch. Not sure whether it's needed for flavor or whether the little bit of alcohol helps "ferment" the fruit. Minnie is no longer with us, so I can't ask her, and I don't believe anyone else makes this who might know. I'm sorry!!! :) I assure you, though, this isn't any type of alcohol bread/cake. I hope that helps a little! :)

Here you go, girls! :)

MINNIE BETTERS’ FRIENDSHIP CAKE

STARTER:
1 c. chunk canned pineapple (juice included)
1 c. Maraschino cherries (juice included)
1 c. sliced canned peaches (juice included)
3 c. sugar
6 T. Brandy

In a 1 gallon jar, combine pineapple and juice, 1 c. sugar and 2 T. Brandy. Cover loosely (paper towel works well) and keep on kitchen counter. Stir daily for 2 weeks. NEVER REFRIGERATE STARTER!

At the end of 2 weeks, add Maraschino cherries and juice, 1 c. sugar and 2 T. Brandy. Cover loosely, continue to stir daily for 2 weeks.

At the end of 4 weeks, add sliced peaches and juice, 1c. sugar and 2 T. Brandy. Cover loosely, continue to stir daily for two more weeks.

At the end of 6 weeks, strain juice from fruit mixture. Divide into 3 jars (1 ˝ - 2 c. each). Use one batch to start cake and keep others in a cool, dark place or pass to friends. Use fruit as ice cream topping or eat plain.

FRUIT CAKE MIX:

1 ˝ c. starter juice
7 1/2c. sugar
1 - 28 oz. can slivered peaches (juice included)
1 - 20 oz. can chunk pineapple (juice included)
2 - 9 oz. jars maraschino cherries, drained, cut in ˝.
1 - #2 can fruit cocktail (juice included)

Day One: In a 1-gallon glass jar, combine 1 ˝ c. starter, 2 ˝ c. sugar and peaches with juice. Cover loosely and stir daily for 10 days.

10th Day: Add 2 ˝ c. sugar and pineapple with juice. Cover loosely and stir for 10 days.

20th Day: Add 2 ˝ c. sugar, Maraschino cherries and fruit cocktail. Cover loosely and stir daily for 10 days.

30th day: Time to bake!

CAKE:

1 ˝ - 2 c. drained fruit mixture
1 yellow cake mix (NOT pudding type!)
2/3 c. oil (NOT melted shortening!)
4 eggs
1 box (3 5/8 oz.) vanilla instant pudding mix
1 c. chopped nuts
1 c. coconut
1 c. raisins

Preheat oven to 350 degrees.

Combine cake mix and pudding mix. Mix in oil and eggs with spoon. Add fruit mixture, nuts, coconut and raisins (if used).

Pour into greased and floured Bundt pan. Bake 1 hour. Remove from pan while hot and cool on rack.

Note: Can be served plain or frost with cream cheese frosting.

Remember to split the original starter liquid (after fruit has been strained out) into 3 jars. Keep one for your next cake and pass the others to friends.

Cake freezes well.

I have it! I have it! My cousin-in-law's mother used to make it every year and gave me the recipe before she passed! I will have to dig through the cookbook for you, Denise, but I will get it for you asap. We have a full weekend with unexpected company and a big surprise birthday party for my husband on Sunday... Denise, I have heard of it. but have no recipe for it. I looked on-line also, came up with an Amish friendship bread with fruit cocktail in it. Go to www.cooks.com/Amish friendship bread with fruit cocktail. This is what I did. Hope that this is the one your looking for.
