Posted - Jan 30 2013 : 10:40:11 PM If you string up green beans and air dry them over the wood stove or under the eaves of the porch in warm weather you have "Breech's Beans"! they could then be stored for winter use. Most often they were kept in a ratty old pair of "breeches" that didn't fit anyone any more!

Posted - Jan 30 2013 : 08:31:38 AM Yes I think Chow Chow is where you take all of the end of the year garden vegetables like corn , peppers, zucchini, ect. Chop them all up and mix together. You can process it and can it and store for the winter. I think that is what my Grandmother use to do and called it Chow Chow. It reminded me some of pickle relish. My grand mothers always had corn in it.

Chow Chow is a mixture of chopped cabbage, green and red bell peppers, sugar, vinegar, and a few spices. I will try to post a recipe when I can get one. A lot of people like to eat chow chow with pinto beans and cornbread. Shuck beans are either pink half runner or white half runner beans that have the string removed and are either put outside to dry in the sun or are dried in a dehydrator. Some people break them or cut them as if preparing them to cook but dry them. Others run a needle with heavy thread(twine)through them leaving them whole and hang them up to dry. If green beans are one of your favorites then you would most likely love this type of bean. I try to put some away each Summer to have to eat for the Winter months. They are especially good when seasoned with a small piece of salt pork.

Posted - Jan 29 2013 : 3:11:19 PM My mother used to make chow chow; vegetable, etc... I'll try to get a recipe from someone and post it. I loved the stuff! When we ate rice & gravy, we always mixed the chow chow in with it. Marly

Posted - Jan 29 2013 : 12:47:38 PM Not sure about shuck beans, but chow chow is pickled garden vegetables. Don't have a recipe, but it is very similar to giardinera.
