oh my stars and garters ... i made THE BEST potato salad tonight for a pot luck supper tomorrow night. recipe is downstairs .. i'll post it tomorrow .. but i am in a 'potato-coma' right now .. from tasting and re-tasting!!!

basically, the only cooking is the POTATOES .. and baking the walnuts and frying the bacon topping. it has scallions, cucumbers, radishes, red and green peppers (oh and i'm probaby leaving something out!) .. AND it calls for Mayonnaise and Sour Cream .. well .. wouldn't you know .. i grabbed 'cream cheese' off the shelf rather than sour cream .. sooooooooooo .. rather thank just leave it out .. i put dollops of cream cheese in it and mixed it up real good. (it did call for parsely or cilantro and i went into the garden in the pitch dark .. but then decided i didn't want to encounter 'jake the snake' .. and will mix that in tomorrow after sun-up! the bacon crumbles and baked walnuts are a topping to be added just before serving.

honey hunk is making another presentation of his trip to Mt. Everest at a local church .. and we're all bringing pot luck. should be fun!

Frannie, do not defrost your hashbrowns before you make them. Boil them frozen. I would think it would be soggy too if you defrosted first. Might not be to good that way.

oh my goodness .. i would think it would be 'soggy' .. after being defrosted and boiled. i have GOT to try that one! having company for lunch today .. think i'll give it a whirl! thanks!

OK gurlz that recipe sounds so yummy! I am very hungry at this moment! I have an easy way to make potato salad if your in a hurry or if you just dont want to wait around for your taters. I have used frozen hashbrowns. You just boil your water and put the taters in for about 3-5 minutes. And when they are done you make your potato salad as usual. It makes things very easy if your in a time crunch, or if you have a huge crowd. And it looks cool too! You gotta try it!

Moe-cool. My mom taught me and I'm pretty sure my grandma always boiled her chicken first too. Oh, and it works for ribs too. Makes it so much faster and yes, great for crowds. I bet it was a big hit at your daughters grad party.
I sometimes also mix Chicago Steak Seasoning (Penyzeys Spices)with the lemon pepper to give it a little more of a smokey flavor-has hickory in it. And, I have also just tossed it in the oven with those spices and no BBQ sauce and has a nice flavor and is always oh so tender.

Oh, Ellen! I do that too except I 'll have to try the seasoning! I make this up ahead and serve it whenever I have a crowd. Even made it for my daughters high school grad party - 12 years ago, gulp!

Thanks-that looks great-would have went good with my BBQ chicken I had for lunch today! I'd be happy for other tried and true pototo salad recipes-please share.
Here's my trick for fast BBQ chicken-first boil up lots (I use a lemon pepper seasoning in the water). Then, you can make what you need and freeze the rest in small portions. The frozen is great when you need a quick meal-either bake it or grill it with your fav BBQ sauce. It reheats great in microwaves for lunches too.

here t'is gurlfrenz .. all of yours sound yummy too ... i was surprized this didn't call for any salt or pepper ... i bet some rosemary in this recipe would taste good too .. or substitute cilantro for the parsely.




FAMILY ROUNDUP POTATO SALAD

recipe from one of my two most favorite cookbooks:

Towns, Trails and Special Times - The Marlboro Country Cookbook

made this for church supper tonight .. it is ohhhhh soooooo yummy!

and i didn't even BURN it!


6 to 8 medium potatoes

1/2 cup clear Italian dressing

1 cup chopped celery

1 cup chopped cucumber

1/2 cup chopped parsley

1/2 cup chopped sweet red and/or green pepper

1/2 cup chopped green onion

1/2 cup sliced radishes

1/2 cup mayonnaise

1/2 cup sour cream

... O.K.! O.K.! (i accidentally grabbed CREAM CHEESE instead of sour cream

.. but that didn't stop me from 'substituting'!!!

1/2 pound cooked bacon, crumbled

1/2 cup chopped walnuts, toasted



Peel and cook potatoes; chop and put them in a mixing bowl (about 6 cups).

(had to keep 'hovering' so the potatoes weren't too raw or too mushy!)

While potatoes are still warm, pour over Italian dressing; cool.

Add chopped and sliced vegeteables.

Combine mayonnaise and sour cream (ha! OR cream cheese!);

pour over potatoes and vegetables.

Mix well.

Chill to blend flavors.

Top with crumbled bacon and walnuts just before serving.

(I made a space on one of the back-burners of the stove for me to sit-upon to stare constantly so that i didn't cremate the bacon!)

the walnuts .. i just spread on a cookie sheet (with sides) and baked them for about 10 minutes on a 'low' oven temp.

then 'crunched them' with a rolling pin

MAKES 8 TO 10 SERVINGS

My relatives made a version of potato salad that had beets in it. It tinted the salad to a nice sweet light pink color and everyone took lots thinking it was an Ambrosia salad. Boy were we surprised, esp. since many of us aren't crazy about beets. But it was yummy and a great way to use up that can of beets that's been hiding in the back of your cupboard for the last ten yars. I'll see if I can find the recipe and post it also.

those do sound very yummy!

I have been doing something different with regular mashed potatoes lately..while the water boils I toss in some rosemary and bacon bits ..no need then to add salt.Just make the potatoes as normal..but oh my the flavor the rosemary and bacon give it is just delicious!

Don't forget to post your recipe . I love potato salad and I must say I make a pretty good one myself but this one sounds way to yummy
