 Help! Diabetic Dessert Recipe Needed for Tomorrow!

Hi girls!

HELP!

Do any of you have a good recipe for a diabetic dessert that could be made from scratch with ingredients I already have at home? I have to make a special dessert for tomorrow - it's a very unexpected, last minute thing, and I really don't have time today to run out to the store. I've got basically every scratch ingredient you can think of, as well as frozen strawberries, apples and other types of fruit. I also may have a few packets of Equal stored in the pantry, but I don't usually keep that kind of thing on hand. I do have some unsweetened gelatin in the cupboard, and I also have about a cup of Ricotta in the fridge, as well as some cream cheese, butter, whole milk, eggs and sour cream, but nothing low-fat (shame on me... but it's the holidays!). I really could use some help with this!!!

mmm that salad sounds awesome!

Jello, sugar free pudding, some stevia would help next time. And maybe some sugar free jam, I made some last summer with stevia turned out great!

Thank you so much for the ideas, girls - and for the recommendation, Kristina! My gelatin was a flop, so I opted to make a really great salad instead with green leaf lettuce, red onions, apples, chopped turkey, pecans, feta cheese, dried cranberries and light raspberry vinaigrette on the side. It was a huge hit, thank goodness. My stepdad is diabetic, and I had special things he enjoys stored for him in the cupboard for a while, but when we saw them last time, I just gave everything to my Mom to take with them. I don't know what I was thinking. Not smart. Next time I go to the grocery, I think I'm going to pick up a few little things and just keep them squirreled away for special occasions like this. Sorry I didn't see this earlier. I get so many of our recipes from "Diabetic Living" Magazine (they have some on-line too). We are not diabetic, but with dh's numbers I use many of their recipes for our health.

Make something with Jello and cool whip in parfait classes, possibly make a layer in it of fruit.

Thanks so much, girls... I don't have any xylitol or agave... can I use anything else? Would honey be better than sugar? If so, how do I substitute? I appreciate your help! - Nini

I've used a muffin pan and put a spoon of brownie mix, spoon of cream cheese mix and top off with the brownie mix. You can do the same thing with any muffin mix from scratch.

I make my muffins with no sweetener and then top them with fruit and agave. Make fresh whipped cream with xylitol as a topping.

Why not make a sugar free cheese cake? Mix the cream cheese with the ricotta and take a basic cream cheese recipe and use agave, xylitol, stevia but please not the chemical equal! lol

You can also make brownies and put the cream cheese in the middle that is really yummy!
