If anyone has easy cookie recipes out there I know it will be all you farm girls.
I have to bake at least 12 dozen different kinds of cookies for hubby's work. Sure I have a ton of my own recipes, but he doesn't want the usual ones that I make every year :(
So if you all have a few easy quick and easy ones, I sure would love to have them. Last year I did the Rolo cookies and everyone LOVED them so I will do them again.

funny that neither of us like the kind with flour, but like this one with out! To me, the kind with flour were a little bland, the flour washed out the pb flavor, or something.

I never really liked peanutbutter cookies with flour either.
For that reason I was hesitant to try them. But I am sure glad I did

I must concur Jenne, I think they are better then regular pb cookies too. Personally I never truly liked real pb cookies with the flour. But, I love this version!

The pb cookies are sooo soooo easy and delich!
They taste like regular BP cookies, except they are actually better.
The tray with chocolate chips are in the oven and due out soon.

Heather, interesting story about the history of this
Peanutbutter cookie recipe. I have used up the eggs
on cookies and the pb on the dogs, (i always sneak a
spoonful too!) But I gotta try this today. So off the
the grocery I go!

oh and ps you know what was crazy about the gov pb...is it always had a pb cookie recipe on the side of the can. That recipe had to of had like 20 ingredients. My family, nor most the other poor folks that lived around me, had ALL those ingredients at the same time! So when I found this easy pb cookie recipe, every one in the neighborhood was so happy to get to make some cookies with that pb! ;o)

Jenne, the pb recipe is one of the few flourless things that you really do NOT miss the flour, it taste like there has to be flour in it. A lot of people are amazed when I tell them there isn't any flour in it. Some flat out don't believe me! And say that it's not possible for them to have the texture that they do with out flour that shouldn't they just be melted pools of pb....but nope they are one awesome pb cookie that you would swear had flour, but doesn't.

Personally I started making them about 30 years ago out of poverty. We would get pb, and eggs, from gov food. But, not flour. So all I had to add was the sugar, and vanilla. But, since we lived in such poverty, came the fact that I found a lot of things could be subbed for the vanilla, almond extract, and/or what ever other extracts we had in the house or liquors! lol haha

recipes from the Suburban prairie homemaker! I also
want to try the peanutbutter cookies without the
flour. Trying to go wheatfree, but I love my cookies
especially this time of year.

I've done the Cozyana recipe for years, the only thing I do differently is add 1 teaspoon of vanilla extract (or any extract really, my mom likes it when I use almond extract, or amerreto alcohol).

But, last year I seen a recipe and it hit me when I had been missing in this recipe....brown sugar! So now I do 1/2 cup of brown sugar and 1/2 cup of white sugar and it's almost like tollhouse cookies! I love it this way. And I use chocolate chips too most the time.

BUT, I did it for years just as Cozyana put up (with exception of the additional teaspoon of vanilla) and every one always liked the super simple pb cookies. I would often add the hershey kiss in the middle. But, now I've been doing it with the brown sugar and chocolate chips and love love love them even more! And they are super duper easy! And the best part about them? Gluten free too! So a lot of people can eat them!

I just made the easiest Snickerdoodles ever. Violet and I made them on Sunday and I had all the ingredients on hand.

Best and easy Peanut Butter Cookies
1 c peanut butter
1 c sugar
1 egg

Mix together, roll inot ball and then in sugar. Put on cookie sheet and press down with a fork twice to make the cross. Just like regular PB cookies. Bake 350 degrees for about 12-15 minutes. Watch so they don't burn. I swear noone will miss the flour or other ingredients. You can add chocolate chips if desired. Or.... place hershey kisses in the middle of the cookies before baking. I make these because they are gluten free. My 6 grandkids love them. It only makes about 18-20 nice size cookies. I don't know what happens if you double the recipe. THESE ARE GOOD!!!!!!

Here is one that is super simple, fast, and yummy!

Dawn in IL


Mint Sandwich Cookies
Yield: 40 cookies

1 tube (18 ounces) refrigerated sugar cookie dough softened
1/4 cup all purpose flour
1/8 teaspoon peppermint extract
Coarse Sugar
40 chocolate-covered thin mints (Necco chocolate covered thin mints worked fine)

1. In a large bowl, beat the cookie dough, flour, and extract until blended. Roll into 1/2" balls.

2. Place 2 inches apart on greased baking sheets. Coat the bottom of a glass with cooking spray; then dip in coarse sugar. Flatten balls with prepared glass to 1/4 inch thickness; dipping in additional sugar as needed.

3. Bake at 350 for 7-9 minutes or until set. Carefully remove one cooking from baking sheet. Immediately turn cookie over and place a mint on the bottom; top with another cookie, pressing lightly. Repeat with remaining cookies and mints. Cool on wire racks. Enjoy!

My kids favorite is....Fitz crackers with peanut butter. Make little cracker sandwiches. Cover in melted chocolate. Let cool on wax paper. Yummmmmmy!

We will be making them this weekend.
