our dept is having a breakfast birthday celebration this friday and i am thinking that i would like to bring mini quiche type things--i am tempted to go to GFS and BUY something pre packaged...
if i make something at home i need to be able to keep them hot til i get to work and we only have a micro at work--

i truly do not have a tried and true recipe for such and am relying on you all to share!

so- there will be between 12-18 ppl eating and tehre will be other things -donuts,muffins, bacon brought in....

have to report in!

did all of the prep work that i could last nite-diced up ham(cheated and bought a large "slice" at the grocery store), finely sliced green onions, bought precooked bacon (just as time saver- won't do that again!), pre-cut my crust circles and wrapped in wax paper in frig,,then this morning i greased the pans and filled- made 6 with just egg and cheese as we have a non meat eater in the group; 12 with ham (6 with onions and 6 with cheese) and 12 with bacon (again 6 with cheese and 6 with onions)--baked them 30 minutes (could have actually gone 1-2 minutes longer maybe! --after they sat out a few minutes i had to leave so covered them in foil . Huge success!!! tho i would suggest taking them out of the pan after a few minutes and pput on a serving platter- i left them in muffin tins for ease of knowing what was what and then ran a knife around the edge of each.

our group had pre-picked what would be brought so i knew no one else was bringing quiches..

again- great success and the birthday girl was surprised and impressed with our breakfast!!!

thumbs up on this recipe!oh- i did NOT put in nutmeg (tho i love it! and did not salt or pepper)
because one gal was bringing stuff to make burritos we also had option of taco sauce or catsup here.

yeah quiche is perfect. However, funny thing is I thought the same thing the last brunch I went to. And you know what...all that was there was one small salad, and 6 quiches! lol At least we all had different flavors! lol I wish I had remembered to of brought the grapes I had bought for the brunch! And brought another salad! lol

one of the girls has a thermal thing if she remembers to bring it-if not c'est la vie!
i'm just thinking we need more than donuts and carbs!

yeah actually quiche is one of those things, that hot or cold it's about the same. A lot of people eat them chilled/cold. So I wouldn't worry about them being hot. They are usually at our brunches (I make them too! lol) and so far I don't think I've ever had a hot one at them! lol haha

Love the breakfast minis. I have made lots of different recipes, and they are just as good cold as hot. If you want them hot, they are easily heated thru in the microwave. Have fun.

I'll just copy and paste the instructions after placing the crusts into the muffin tins (push up the sides a bit:

The only thing I do recommend is precooking anything (like sausage, bacon, etc..) before putting it into the quiche. I highly recommend making a variety of flavors (bacon and cheese, tomato, spinach, scallion, etc.) These are small quiches, so your ingredients will also be small usage.

The custard filling was made using:
•3 eggs
•1 1/2 cups milk or half and half (or blend)
•Salt & pepper
•Pinch of fresh ground nutmeg
Whisk these ingredients together.

Fill tiny crusts
Place the fillings (your meats/veg/cheese into the pie crusts placed already in the muffin tins. This makes it easier to make sure for an even distribution, do some veg and some non-veg.

Now pour the custard over the fillings.

Bake the mini quiches at 375 F (190C) for about 30 minutes, or until set.

Cool on a wire rack, and try not to eat them all!

If you did them in muffin cups, which I've done, it's easy. It's the keeping them warm that's the thing. Do you have one of those thermal bags (Pyrex makes one to go with their 9 x 13 baking dish).

The recipe I have calls for eggs, cheese, etc, bacon, but I add jalapeno's or green chilis (which you can omit) and is really easy and tasty. I also make some with tomatoes, scallions, parmesan, etc...which is similar to this recipe. The sky is the limit, honestly. Basil, onion, tomato, spinach--anything goes!

As for the crust, to make things easier, I'd simply use the Pilsbury crusts and cut them out with a cup or circular cookie cutter, then place in bottom of the pan. Then, follow recipe as is.
