 Thanksgiving chillover: Vote on choices

Okay, here's my menu:
Turkey
challah stuffing with mushrooms, onions, celery, and sage
Apple/butternut squash bake with raisins
multicolor little potatoes with rosemary and garlic
braised brussels sprouts with shallots
Giardiniera salad with carrots, cauliflower, celery, red peppers, sun dried tomatoes and olives
cranberry sauce with orange
homemade Italian bread with roasted garlic, olive oil, and herbs
sweet potato pie with meringue
Kentucky Derby pie (chocolate chips and pecan with bourbon)

AND (drumroll): CHILLOVER!!!!!!

I'm torn about which kind to make. I have two ideas. I have a fresh coconut, so it will definitely be part of the mix, as will some canned coconut milk. The choices will be:

1. Chillover contestant 1: sour cherries, grated coconut, coconut milk, sour cherry juice (I have done this before with good results)

2. Chillover contestant 2: Chopped fresh pineapple, grated coconut, grated carrot, orange juice, coconut milk.

3. Same as #2 but without the carrots.

So, Farmgirls, based on my menu, which sounds good to you?

Hmm, all sound amazing but I think I'd vote for #1. The pineapple/coconut combo sounds a little too tropical to go with your other dishes. But I love cherries, so I might be biased. :)
