Any good advise for a "wanna" be vegetarian?

I know that it is a completely different lifestyle, but have you noticed how healthy vegetarians look and feel? Is there an easy way to begin and maintain this type of lifestyle or is it best to go COLD turkey-pardon the expression!

Any advice or helpful hints for a beginner would be greatly appreciated!

Annie, I found the recipe for Krab Kakes here-http://happyherbivore.com/2009/05/vegan-crab-cakes/

But do NOT use 10 Tablespoons of vegan Mayo-it must be a misprint. I use about 3 tablespoons of vegan Mayo. As for the oatmeal I just made regular old fashioned oats as directed on the box with the Quaker on the front and added dried apple while cooking. Then when serving I added the rest of the things. Enjoy!

Annie good luck in your new cooking adventure.
I thought my husband would really balk at going vegan, but he is totally on board and in fact is probably more sure he will never again touch meat and dairy than am I.This morning for breakfast we are having oatmeal with dried apples, honey, walnuts, raspberries and topped with a dollop of chilled solids from a can of coconut milk. Soooooo yummy. Last night for supper we had vegan crab cakes, crash hot potatoes and broccoli. One of our favorites is "California Hay Stacks", which is basically a taco salad with everything under the sun on it. Layer of corn chips topped with chili or beans of your choice then vegan cheese if you want it then load on the lettuce, tomatoes, olives, avacadoes, onions, salsa and we like to add thousand island dressing made with silken tofu. That is football food for the fanatical snacker. Another snack favorite is Texas Caviar. Wonderful stuff.
I try to make as much from scratch as I can and it cuts down on cost. Especially if you are trying to avoid GMO products.

Thank you for all the info. I'm almost 66 and considering doing the same thing. Ordered a book from Amazon called "The New Becoming Vegetarian" by Vesanto Melina and Brenda Davis. Haven't started reading it yet. Definetly going to check out those sites. The VeganDad site had some really nice looking recipes. Going to be a hard road to travel with a meat and potatoe husband to cook for. Know it's going to be a little bit of extra work, but need to do something and think this is the road to go down. Happy trails to all of us.

My dh and I are in our mid sixties and have been Vegan for about a year. And even after a whole lifetime of meat eating-it really was not that hard to do. And once you eliminate meat and dairy from your diet, you feel sooooooo much better it becomes very easy to stay on that healthy regimen. What a difference in our numbers. Cholesteral is absolutely normal, blood pressure meds have been nearly eliminated.

I think the thing to focus on is not NOT eating meat, but saying YES to other things you could eat instead. When I became a vegetarian it wasn't even on purpose, it was the tail end of a long trailing off. I realized one day that the only meat in my diet was an occasional tuna fish sandwich. So why not just stop buying tuna and call myself a vegetarian, right? Of course, I was just out of college and didn't have years of meat-based cooking habits to change.

I've got two vegetarian cookbooks that I like a lot. One is How to Cook Everything Vegetarian, by Mark Bittman. It really is "everything", a huge tome that includes breads and desserts. A very different book is From a Monastery Kitchen, by Brother Victor-Antoine d'Avila-Latourrette. He arranges the book by season, with lot's of casseroles and soups that use the vegetables that will be available. It seems very French, and you can imagine eating these foods around a huge table in a medieval cloister.

If you want to go "cold Turkey" you can get a vegetarian Thanksgiving meal at some natural foods stores. I forget who makes it. It has "tofurkey" some sides and apple dumplings. I tried it one year and it was good. I'm not a vegetarian any more but it's due more to laziness than anything. I still hardly ever buy meat at the store. Find some good vegetarian cookbooks and start from there. I have some old ones but I think they're out of print. It does require a committment but when I was a vegetarian, my weight was never over 130 lbs. Good reason for me to go back to it!
