Afriend gave us about 5 pounds of pecans and my dad absoutly LOVES pecan pie.

While I tentd to avoid making pie crusts, this one time while he is recovering from surgery, I will bite the bullet and attempt to make his beloved pecan pie.

Does anyone have a wonderfuly scrumptious pecan pie recipe and a great flaky crust recipe too?

chocolate, don't forget the chocolate. i sprinkle about a half cup in the crust before i add th filling.
pecans, chocolate, bourbon, what more do you need ? :-)

a very traditional Southern Inn that was built around 1830. I've both eaten there countless times and stayed there, too. I hope you enjoy it! I will try to work out the recipe that Heather posted, but I want to be sure my math is correct!!!

Anna, Derby pie isn't really a pecan pie if that's what you're after. I love Derby pie, believe me, I'm a Kentucky girl born and raised (and I make one every year for the Derby) but it's not a traditional pecan pie. The recipe above looks great, and is almost identical to the one I make. If your math isn't so good, I'd be glad to send you mine--I think it makes 2 pies :)

My husband and I used to own a restaurant in Nashville, The New Orleans Manor this is our Derby Pie recipe makes 10 pies so you might want to cut it down
20 eggs- room temp
2 1/2 lbs butter-melted and cooled
10 cups sugar
1 1/2 cups all purpose flour
3/4 cup Makers Mark Bourbon
1/4 cup vanilla
10 cups pecans
10 cups choc chips
beat eggs with a wire wisk
add sugar
add flour
add butter
stir in by hand: choc chips, pecans, bourbon

bake at 350 40-50 minutes or until set cool

here is the recipe. i found it on AllRecipes

Combine
2 cups light brown sugar
1 tablespoon all-purpose flour
1/2 cup melted Butter
1 cup evaporated milk
1 teaspoon vanilla extract
3 eggs

Mix well and add 1 cup chopped pecans. pour into 1 deep dish pie crust or 2 regular crusts. top with 1 cup pecan halves

bake at 350 for 35-40 minutes
this is the basic recipe. sometimes i tweak it by adding 1 c chocolate chips or 2 T jack Daniels. maybe top with whipped cream.
i like it because it doesn't use the corn starch and doesn't have the stick to your teeth qualtiy that some pecan pies have. hope you enjoy it.

i have a wonderful Pecan Pie recipe that doesn't use corn syrup if that is a concern. it is more like a custardy pecan pie than what you are used to having. i prefer it. if you would like i can try and find it for you.

Anna, I have a lovely pie crust recipe that doesn't call for rolling--

It's my "make do" single pie crust and I think it would do wonderfully with the pecan pie (and lucky you with all those gorgeous nuts!!!)

I use my stand mixer for this with the pastry attachment.

2/3 cup shortening
1 teaspoon salt
1/4 cup water, boiling
1 1/2 cups flour

Blend shortening with salt; add boiling water. Blend well again. Add flour and combine JUST until mixed and crumbly. Pat into ball and press into pie plate. The less the dough is handled the better for the crust.
