Our church is having "Homecoming" Sunday soon and I never know what kind of dish to prepare that's different from the same old same old. I'm so tired of macaroni and cheese; potato salad, baked beans, etc. Any suggestions/recipes would be greatly appreciated. I usually fix something that I can carry in one of those insulated carrier bags so that it doesn't have to be reheated. Thanks!

We had our Homecoming today at church and you'll never guess where I found the perfect casserole recipe --- Mary Jane's Farm magazine. I should have known I'd find something just right in there. It was in one of the older issues - a recipe for Baked Spaghetti Casserole and it was very tasty. I would make it again and highly recommend it. Very easy and quick to make and heats up nicely. The other thing I chose to take was a big spinach salad with chopped eggs, mushrooms, bacon, and red onions. I found a wonderful dressing that consisted of olive oil; s&p; parmesan cheese; paprika; garlic (removed before serving). It made quite a bit, so I had plenty of leftovers. Yum!

Thanks for all the wonderful suggestions. I may do a chicken pasta salad, using Jamie Deen's recipe. Also saw an interesting dish on Pioneer Woman for tamales. You've all got me thinking. Thanks!

Chicken spaghetti is wonderful. Dump cake is good, or a cobbler maybe?

What about a chicken stuffing bake? It's a baked casserole meal that easily transports. My mom's dear friend makes one that's outta this world and it was her mother's recipe--and most requested thing (along with her Texas Sheet Cake) at their little church homecoming.

I always bring a chicken pasta salad:
Cook penne pasta.

Mix with the pasta: cubed chicken, cherry or grape tomatoes cut in half, feta cheese (and sometimes olives), and creamy italian or creamy ceasar dressing

We like it both warm and cold and if it isn't gone (which it usually is), my family loves having the leftovers.
