Hi girls -

Will you please share your favorite recipes for stuffed acorn squash? Do you use apples and nuts? Do you use meat or sausage? Do you use stuffing or quinoa? What is your favorite? We were blessed enough to have five small acorn squash despite the squash bugs, and now that it's so chilly and damp outside, I'd love to make some of them for dinner this week. Please help - I can't find my Grandma's recipe to save my life!

I want to say that my grandpa used to fill them with a potato, sage, mushroom and sausage stuffing, too... I so wish my Mom had these recipes!!

Linda, you really need to try them! Stuffed acorn squash is deee-licious! :)

I'm glad you girls think it sounds good, because IT IS good!!! It's pronounced Que-peh-ay-dah, Mara. The syllables are each represented.

The other thing that I do, Mara, for instant inspiration (and always having something on hand for that snow in day or ice storm) is that I quick cook 1 lb. packages of dried beans and then freeze them in 4 cup bags. Right now in my freezer there are precooked black beans, red beans, and black eyed peas (for whenever a rice dish strikes me!). Put the bags into a sink with hot water and in a few minutes, you're ready to toss them into the roux!

Wow, Jonni, that sounds terrific! I usually just bake mine with some brown sugar, butter, and allspice or cloves or whatever comes to hand, then serve it in the skin. (I cut the ends a little so they lie flat.) I'm going to hit the farmers' market this Saturday for some acorn squashes so I can try your dish. Thanks for sharing it! Just one question: How do you pronounce "Quepehdah"? How are the syllables accented?

ps: I also like your idea of having wild rice precooked for last-minute inspirations. I'll try that, too, now that we're getting into autumn.

I'm glad I could offer something, Nini--there are so many recipes I can't find that I love--they're somewhere (likely marking the pages of another recipe in another cookbook!), so I know what you mean about not remembering particulars.

I'm hungry too--my husband wants meatloaf tonight, though, and since I told him he could pick "anything" that's what we're having :)

If you try it, either of you, I'd love to know if you like it!

Oh! Thank you, Jonni! Your recipe sounds very similar to my grandmother's... I can't wait to try it! YUM!!! :) Grandma definitely used sausage... but I don't remember rice (although I like rice and will definitely try it!). I want to say she used a corn stuffing base... or maybe it was bread stuffing. It has been so long. Isn't that awful?! I'm definitely going to try your recipe, though. Maybe even tonight! I don't have sausage on hand, but have discovered that I can use ground beef and season it with sausage seasonings (for example, fennel), and in a recipe, you can't tell the difference! Weird, I know, but it really works!

I'm getting hungry... It's only 1:00 and now I've got stuffed acorn squash on the brain! LOL! Thanks so much, again, Jonni! YAY!

Connie, I hope you do--it's one of our favorite fall menu items and when my husband sees an Acorn squash in the house he always says, "Quepehdah night?" I love that you can adjust it seasonally with what is in season as far as meat goes. I would bet it's probably amazing with venison, but I'm not a deer hunter :)

Nini, I make something called Quepehdah which is a Native American stuffed squash dish. Originally served in a whole pumpkin, I use a large acorn, cut in half. Discard the seeds and brush cavity with olive oil and brown sugar or maple syrup. You can use any protein--I use sausage or ground beef, but venison, chicken, and even a white fish can be supplemented (it's something that they would eat year round, so whatever is in "season"). You brown your meat, add onion, sage, some salt and pepper, then diced apple. Add wild rice (I usually keep precooked frozen wild rice on hand for this, so I can just incorporate it and don't have to wait for the rice to cook!) Add some nuts (we use pecan, hickory or black walnut), a little butter and mound into cavity of acorn squash. Bake in a casserole with water just up to the half mark of the squash until tender and the stuffing is browned on top.

When serving, scoop out all the filling of the acorn squash with the rice/meat mixture onto a plate, discarding the skin. It's such an incredible ode to Autumn and really feels like you're centered with all the things the earth can offer.
