Patricia, I would be glad to post the recipe. I will be out of town all day tomorrow, but I should have a chance to do it Sunday afternoon after church. Hope you enjoy it. I think I will order one of the cookbooks, too.

Lentil Chili is a pantry staple in my house for a "I forgot to defrost .... or soak the beans" kind of night. I also make a hot sausage and lentil soup and use lentils in chicken stews etc. I live in the Palouse (aka lentil capital USA)... here is a link to an annual event that happens about 8 miles from me: http://www.lentilfest.com/ this site has recipes.

The classic Italian lentil soup is to cook a half pound of bacon. Then remove the bacon and sautee a mirepoix (1 onion, 2 carrots and 2 sticks celery. You want a 2:1:1 ratio) in the bacon grease. Next add a quart of stock with two cups dry lentils. Add in a couple bay leaves and a tablespoon of thyme. Simmer until the lentils are soft. Take off the heat and add four cups of diced tomatoes. Remove bay leaves and enjoy!

I love lentils! I make a great lentil and kale soup. I also love them in any vegetarian dishes with curry. Just google lentil recipes and I bet you will come up with a ton! I like the pretty colors, too.

love lentils, and they are so easy. basically, clean them as you would any dry (if they are dry) and add them to soup, stock, and cook 20 to 60 minutes depending on how tender you like them. i have added them to ckicken stew, tomato soup, all kinds of soups. enjoy.
