If there is something to put in the cider to keep it from turning too fast once it's bottled?

Apple juice may be canned. It will always remain apple juice,tho. Won't turn to cider or hard cider. I have done it that way too, and it is nice to just get out a quart for supper. My kids liked it both ways. I used mostly quarts, but put some in 1/2 gallons. Beats drinking pop.

We used to put up gallons of apple juice. My MIL bought a freezer just to keep it in. We put it in gallon milk jugs. When we took them from the freezer, we just left it on the counter. It was apple juice at first, then slowly turned to cider and if we didn't drink it fast enough it started to have a little tang like hard cider. I bought a press and a grinder last fall, and can't wait to start pressing apples.

I don't think you add anything to it. When I buy it fresh from the farm I just freeze what we won't use right away.
