Posted - Aug 12 2012 : 08:27:24 AM Okay, well you all going to think I am disfunctional on this one, but I need a EASY recipe for canning sweet banana peppers. I grow them for hubby (I don't like them) and I have a TON of them. Don't want to waste them sooooo.... Any fast easy recipes you care to share?

Posted - Aug 12 2012 : 2:30:03 PM I did that last year, and put a jalapeno pepper in the jar too. They were very mushy after opening the jars. I used them in place of chili peppers in an egg baked dish I make. It worked perfect for that, but not for much else.
I hope yours come tasting good.

Posted - Aug 12 2012 : 11:00:33 AM Boil for 3 minutes, rinse in cold water, skin should come off, remove stem & seeds. Pack in jars add 1/2 t salt & 1/2 t lemon juice or vinegar. Pour boiling water over, leave 1 inch headspace. Pressure can for 35 min at 10 lbs pressure. OR for an easy pickle: 1 gallon of peppers 8 cups white vinegar 4 cups sugar Rinse peppers, cup off tops & ribs, remove seeds, or, chunk in slices. Drop in boling water for 2 minutes, plunge in cold water to crisp. Boil vinegar & sugar. Pack peppers leaving 1/2 in headspace. Ladle syrup over peppers, leaving 1/2 in headspace. Prosess pints for 10 minutes in water bath. Not sure if these are easy, but they were the quickest I saw. |
