Posted - Aug 08 2012 : 1:14:23 PM does anyone have a good recipe for salsa? i want to can the finished product. i have lots of tomatoes, green peppers, onions, jalepenos... i also have a saucemaster and the salsa screen for it to hopefully make it a quicker job.

Posted - Aug 22 2012 : 7:01:33 PM I canned 10 pints on Sunday. I had to go to the farmer's market (well, flea market, really) to get the jalapenos because mine did not produce well this year for some reason. The vendor gave me two "cherry bomb" peppers, so the salsa will probably be really hot.
I am like Deb from PA, I do not stick precisely to a recipe but just go with proportions. Whatever volume of tomatoes I have, I supplement with about 1/4 of onions and 1/4 of peppers. So If I have 10 quarts of tomatoes, I would use about 2 1/2 quarts of onions (5 to 6 large ones) Sometimes I add zucchini or cucumber or corn, but I keep them at less than 1/4 of the tomatoes, in order to keep the acid level up. I might add lemon or lime juice if adding these non-acid veggies. I use whatever spices I feel like on the given day, including cumin, garlic, cilantro, chili powder, cayenne pepper, salt and pepper.

Posted - Aug 21 2012 : 9:03:55 PM Michele, today I canned 3qts. hot banana peppers for son-in-law. Learned my lesson and picked up some rubber exam gloves. Worked great! Plus, my DD and DGD's are always coloring their hair..so now we have gloves. Thanks for your concern.Last time I could feel my skin burn under my fingernails even while I was sleeping..

Posted - Aug 21 2012 : 3:08:45 PM my salsa recipe is very much like Deb's... but I go lite on the cilantro (hubby is not a big fan of it)... I got lazy today and decided to make it Freezer Salsa, rather than hot bath it... It will hold well in the fridge,,,for about 7 days,,,after that it needs to be frozen... I just didn't feel like waiting 40min for the hot bath that is why i put it up and in the fridge/freezer.... I got a total of 7 jars & one itty bitty container (1/2c.) of salsa.... This time I used yellow cherry tomatoes along with my early girl & roma tomatoes... I also diced up some bell pepper as well as 'sweet peppers'.... I don't know what it is,,, but mine never comes out the same..but it always comes out yummy... I luv slathering salsa over my scrambled eggs..... :>)

Posted - Aug 18 2012 : 2:07:59 PM I just canned seven 1 1/2 qt. jars of salsa. Used a recipe from cooks.com. Very tasty. DH is munching away on some now. Saved one pint for us. The rest is for DD. All the makings came from her garden. Btw, I found out they warn you to wear rubber gloves when working with hot peppers for a reason. Owwww.

Posted - Aug 18 2012 : 10:17:55 AM i combined things from several recipes i got and came up with a really tasty salsa. it had fresh corn, tomatoes, onions, peppers (green, yellow and red), jalepenos, garlic, salt, sugar, vinegar, cumin, smokey paprika, lemon juice, dried cilantro. the amounts i used could have some leway, but i tried to write it all donw so i have it for next year. if anyone is interested, i can put give the recipe. for what i used, it yeilded me 15 pints of salsa. due to the low acid content, i did pressure can it at 11 pounds of pressure for 15 minutes. thanks girls for all the help! i was really pleased with the end result.

Posted - Aug 16 2012 : 05:42:16 AM Got 12 pints of Garden Fresh Salsa made last night. (recipe above) Went out to the garden for Cilantro and they plant had "disappeared" so none in this batch. SuperBowl Party ready come January!!!

Posted - Aug 14 2012 : 06:28:03 AM Here is my recipe for Garden Fresh Salsa. I make a big batch and then process it for 30 minutes in a hot water boil bath. I don't use exact measurements for this. Taste is how I judge when it's done.
Roma tomatoes, seeded and coarsely chopped Peppers, an assortment of your favorite, i use banana, cayenne, and jalepeno, seeded and chopped Green onions, otherwise referred to as scallions Cilantro - fresh, chopped Garlic, minced Lime juice Tomato sauce Salt Combine all together until you have the desired taste and hotness. I add some Frank's Hot Sauce to mine.

Posted - Aug 14 2012 : 04:51:02 AM You can freeze your tomatoes first. Then when they are just partially thawed, the skins come off very easily. This is our family recipe. Roaster full of peeled and cut tomatoes 4 cups vinegar 2 cups each of Hungarian pepper, onion,green bell peppers jalapeno peppers then it says hot long peppers, and little hot peppers. This was my grandmas recipe, so don't know! ha 1/4 cup salt, 1/8 cup pepper, 1/2 cup sugar. Add the sugar after done cooking. Cook till think and juicy. We do cook it in the oven stirring every so often. I use whatever peppers I have. I do not put the seeds in keeping it more mild. Michele

Posted - Aug 14 2012 : 03:29:23 AM I posted for recipes also, but no responses. However, I did can 6 pints yesterday, using the Ball recipe for Jalapeno Salsa. Instead of 3 cups of jalapeno peppers, I used 2 1/2 green bell and 1/2 cup of a mix of hot peppers I had from the garden. We popped open a jar and it was pretty good. The look however, is more green than red - no big deal to me (picture on my blog).
We will be trying various recipes this summer to see which one we like the most.
I realize why not many farmgirls can salsa - the peeling, coring, etc. of the tomatoes.
Anyway, wanted to share. I hope to try at least 3 more different recipes.

Posted - Aug 11 2012 : 06:27:18 AM Here is a link from the USDA for Tomato Products. I have used the Salsa Recipe that uses Roma tomatoes and the cilantro. We really like it. You can use different combinations of any peppers, they just recommend that you do not change the amount they suggest. We made a more mild sauce.But you can make it as hot as you like
