I always shredd up a bunch and freeze in 2 cup portions. Then I have zucchini bread for christmas gifts!

Try sauteing zucchini slices in olive oil and garlic. When they brown add tomato sauce and let it thicken. Pour over pasta. Yum.

Another idea - I was getting stress out about all the zucchini I "had to" do something with. One trip to the local food bank with two grocery bags of zucchini and my stress was gone. They were so delighted to receive the zucchini, I was amazed!

These are my families two favorites (besides pickled zuc!). These are both diet recipes, but you don't have to make them diet. they are good any way you make it. I've made many variations of both, but at least this is the basic recipes, and you can just go from there-

We've been eating the Richard Simmons (or variations of it) one for at least 25 years now! It's a comfort food family favorite. And in my family and I's opinion the more zuc in there the better....a lot of times Zuc and onions are the only veggies we use in it-no mushrooms, tomatoes etc, just lots and lots of zuc and some onions.

When you freeze shreded zukes do you have to do anything special? I tried doing that many years ago and when I thawed it out it was really watery and made the bread I put it in taste weird. I probably did something wrong for sure.

Our boys love zucchini rolls from Simply In Season cookbook. I'll look up the recipe later today. They aren't a sweet roll so we use them to make sandwiches. Yum!

Lucky you, Debbie! I only got three small ones before the squash bugs got to everything!

Here's one of our family favorites from my Mother-in-Law:

Grandma Birdie’s Zucchini Casserole

Casserole:

3 c. diced zucchini
2 c. shredded carrots
1 med. onion, chopped
1 sm. jar pimientos
1 can cream of chicken or cream of celery soup
½ c. sour cream
½ package Pepperidge Farm Herb Seasoned Stuffing Mix

Topping:

1 c. Pepperidge Farm Herb Seasoned Stuffing Mix
½ c. melted butter or margarine

Oven to 350° .

Boil zucchini in water until tender, drain well. In large bowl, lightly mix together all ingredients for casserole and turn into a casserole dish.
Bake for 30 - 45 minutes til bubbly.

Melt butter in pan and lightly saute remaining 1 c. stuffing mix. Sprinkle over top of casserole and return to oven, baking until topping is brown and crunchy.

You can even make it ahead of time and freeze it (sans topping, of course!) if you'd like. It's also great as a cold leftover side dish with a little hot sauce (my hubby actually likes to take it to work cold for lunch).

I agree about pintrest. There's also a good book called zucchini houdini. And this is my favorite pumpkin zucchini bread recipe.

I make bread and butter "pickles," relishes, mock pineapple, dry it, shred and freeze it for later.

when you find a hidden one that has grown to godzilla size, you slice off the top 1/4, length wise, scoop out the pulp, saute in butter/olive oil till almost clear, add browned ground beef, seasoned the way you like, turn fire down real low, add onion, chopped tomatos, chopped green beans (pretty much any and all veggys), add cooked wild rice, when all cooked thru, put back in zucchini shell, put top back on and cook in oven till shell is soft, slice into portions and its really good...

My kids think its a treat when I make chocolate chip zucchini bread. The nice thing is you can shred the zucchini and store it in the freezer and then pull it out later in the winter to use in the bread. I also absolutely love fresh zucchini sliced into little coin shapes and sauteed with a little butter.
