My children and I are going to a local organic apple orchard to pick lots!! We usually don't make it through with any after just eating them but I would like to try some new things (so I will have to pick lots): Muffins, pancakes, baked...
We are vegetarian with no eggs but if you have a great recipe that you wouldn't mind sharing and it contains eggs, I can find a good sub. no problem. I just would like some tried and true new yummies for a Autumn welcome treat!!

I add apples to hashbrowns when I make them. Well, not really traditional hashbrowns as I chunk the potatoes, but anyway. Just chunk up your potatoes (I use red potaotes and yams mixed), add some sliced sweet onions, and 1 or two apples peeled and chunked up, add seasoning, and whatever oil you use to cook with (I use e.v. coconut oil)- they turn out with a nice flavor, the apples make them better- or at least thats what my family says =)

havne't tried this yet .. but is sounds yummy!
CELERY ROOT AND APPLE SLAW
MAKES 6 CUPS
1/2 CUP MAYONNAISE
2 TEASOONS CHOPPED TARRAGON
1 TEASPOON LEMON ZEST
1/2 TEASPOON SALT
2 TABLESPOONS FRESHLY GRATED HORSERADISH
2 TABLESPOONS LEMON JUICE
2 SMALL BULBS CELERY ROOT )BOUT 1 POUND),
PEELED AND CUT NTO SMALL MATCHSTICKS
2 CRISP APPLES, SUCH AS MACOUN, CORED AND CUT NTO SMALL MATSCHSTICKS
1 LARGE EGG, HARDBOILED AND FINELY CHOPPED (i suppose you can omit the apple)
you can also replace the celery root with a one pound poackage of pre-cut sole slaw .. or slice up your own
Combine the mayonnaise, tarrago, lemon zest, salt and horseradish in a medium bowl.
Toss the lemon juice, celerty oot (or cole slaw) and apples together in a large bowl and stir in the mayonnaise mixture and egg.
Let sit at least 45 minutes before serving.

Tracey- How about Apple Tortilla Wraps!!
1 apple, sliced in 1/4 slices (one apple for every two large or 4 small tortillas.)
In a saute pan, melt 2 T butter or margarine. Over meduim high heat, add apples, 3 T water, 2 T brown sugar, 1 tsp cinnamon and some freshly grated nutmeg (just a few swipes over the grater), and a pinch of salt. Saute until apples are soft, and the sauce thickens- about 10 minutes.
Put apples into tortilla, add grated cheddar cheese (use a veggie substitute!), wrap up tortilla and eat!
