Does anyone have a favorite veggie recipe? I do eat some fish (depending on origin). Is there any far girl who does not eat meat?

Here's one of my favorites:

Baked a couple extra potatoes next time.
Dice cooled potatoes. Melt a SMALL amount of butter. (I usually wipe the surface with a gleaned empty wrapper!) Add some chopped onions, celery, carrots, any leftover veggies. Cook til tender. Add potatoes. Stir. Add garlic powder, basil, oregano, and some cumin. Beat and egg or two. pour over the top. Put the cover on the pan and turn the heat down low for 3-4 minutes. I think a fancy name for this is a fritatta (spelling?), but my hubby knows it as comfort food. They grew up on a farm with chickens, garden, etc. They had this every three days as it cleaned out all the must-gos!

While we only have it once a month or so, it is really good!

My hub is a veggie and although that diet put me in the hospital, I still make quite a number of vegetarian dishes. Try roasted butternut squash lasagna with Hollandase sauce layers. Make soup out of everything! Make several versions of the vary same thing (sweet, salty, sweet and hot) and then in different mediums (preserves, sauces, dressings, dried for rubs and jerked, savory and then sweet pies, casseroles, etc). Try making your own cheeses. Try INDIAN food! Live at the library until you've checked out every veg cookbook they can provide. Ask your local farmers, you-pick'ems, or farmer's markets for suggestions (they will often supply you with the one recipe you will forever cherish). Take cooking classes from your local health food store. Start a vegan SWAP blog and post best submitted recipe for the week or something. Trade recipes with others. PLENTY of meat eaters have a deep abiding love for fruits and vegetables and grains, ya know, so even a regular cookbook can lead you to the most delisch recipes imaginable. And don't forget those cooking-gardening shows on TV! Be sure to subscribe to everything listed, blow, that you can learn from. Oh, and one last thing . . . write a list of each and every food you will eat and Google it for recipes (i.e. "quinoa recipes") and make them.

I'm a pescatarian. Yes, we actually have a name for those of us who don't eat chicken, turkey, beef, etc, but will still eat some fish. The rest of my family are carnivores though so we do have a freezer full of beef that was raised just up the street and we know the farmer. Most of the time, I eat whatever the side dishes are.

I love me a good a bowl of red beans and rice. I'll add in sausage for the meat eaters in the family, but leave it out of my bowl.

Are you cooking for anyone else? Are veggie only meals the norm? I've got some great cookbooks that I use for cooking through the seasons vegetarian style.

I used to be a strict vegetarian but I do eat meat now and again, (only grass fed organic and local) but I do tend to eat more vegetarian when it's just me since my husband really just likes meat and potatoes, and he works 6 nights out of the week!

Some of my favorite things to eat veggie are pesto's, unlike your traditional pesto with basil, you can do one with broccoli, and another with garlic scapes and use them as sandwich spreads or in the traditional way with pasta. Very versatile and a great way to use up stuff that needs to go but you can't stomach another "steamed broccoli" dish.

I love Indian spices and flavors and one of the best (and most simple) meals I make is called Vegetable Jalfreezi. Cauliflower, sweet potato, onions, tomatoes, etc...all with a jalfreezi paste then simmered and put over rice. Excellent!

I really, really love Jamie Oliver's cooking and he does so many veggie recipes that are simple and you don't have to have a million different spices on hand that you'll never use again.

If you eat fish, which I eat a lot of in the summer, you can use your favorite fish, place it in the middle of layered heavy duty foil, add fresh herbs of your choice, sea salt, cracked pepper, any spices/seasonings like hot peppers, potatoes, green beans or any other veggie, drizzle olive oil and wrap it all up in an enclosed "pillow" then put into a hot oven to cook for about 25-30 minutes or until veggies are tender. Great way to get in protein and veggies with VERY little effort and it makes just enough for one!

Hi! I'm a vegetarian but only cook for myself so my meals tend to be a little repetitive and boring. I would love to hear other suggestions too. For dinner I usually just fill a big pan with any veggies I have on hand (usually greens and then whatever else is in season) steam it all add a bean of some sort and the end and top it off with salsa and dried cranberries. It works for me - it's filling, cheap and delicious. Dessert is yogurt with frozen berries and cereal. I'm thinking I need to venture out a little - that's been my meal for MONTHS!!!

Back when I was a vegetarian I found the cookbook "Meatless dishes in Twenty Minutes" by Karen A. Levin very helpful. It has a wide assortment of meals that are really easy to prepare & very yummy.

I used to be a vegetarian. One of the best meals I ever created by myself was what I called "Sweet & spicy red beans". All you have to do is cook a small bag of red beans from scratch. Once they're half way done & the water is boiled down a good bit add about 1 cup brown sugar & about a table spoon each of Chili powder, Cayenne pepper & Paprika, maybe more or less for your tastes and let it cook down untill the beans are down then serve over rice with a salad. Its really tasty & simple. :)
