According to cheesemaking.com:

A: "Junket is a soft custardy desert made popular in the early 50's. The coagulation had to be slow and not much rennet added. I don't think you've wasted any milk, you just might not get a very firm curd. :)
May I ask what recipe you're using for ricotta that calls for rennet? I've just never seen a ricotta recipe where you add rennet, that's interesting and I'm wondering why the recipe would call for it. :)

I may try both recipes.
Just an FYI on the rennet: once I opened the box, it does say it is for cheese making too. I made a batch of it using rennet last night. I sure hope I didn't waste 4 1/2 qts. of raw goat's milk. I'll have an update later.

Posted - Jun 05 2012 : 08:46:11 AM Well, you don't need rennet for ricotta - just heat the milk to 195*, add in vinegar or lemon juice until the curds separate (no more than 1/8 cup, and if you still don't get a clear seperation of curds and whey, raise the temp. to 205*), and drain. Don't squeeze the curds unless you're going for a dry ricotta. That's it! If you want to, you can add some melted butter and 1/2 tsp of baking soda after you've drained it.
Junket rennet tablets don't work well for cheesemaking, though. I recommend getting a bottle of liquid rennet. I buy my rennet and cultures from http://dairyconnection.com/ and use recipes from fiascofarm.com and the book Home Cheese Making by Ricki Carroll (www.cheesemaking.com)

Posted - Jun 02 2012 : 5:39:50 PM I'm making goat's milk ricotta cheese soon. We are expecting another kidding this next week, and soon after that I should have enough milk to make it. One goat isn't enough here. :)

Posted - May 30 2012 : 4:27:54 PM Kristina our local IGA store had them but the tablets were for making icecream and other stuff. I almost bought them to make cheese but was told those were the wrong kind so I never bought them.

Posted - May 30 2012 : 07:20:57 AM Here in WI, I can find them in some grocery stores (usually the more rural ones) and also at the bulk/natural store here. Usually health food stores sell them too. But again, that is here in WI.
