I have a lot of sweet potatoes. I want to make mash sweet potatoes and can it. I am wondering if I have to use a pressure cooker canner or can I use a water bath?

anything that is not scidic has to be pressure canned. Sweet potatoes fall into that category. Wonder if you could cut them into fries and freeze them? Sweet potato fries are yummy. You can buy them in the grocers frozen, so....maybe?

If you contact your local Extension, they should be able to give you a chart on what can be canned in a water bath, what needs a pressure cooker, and how long to cook them.

I read that you have to use a pressure canner. I've never canned any, but hope to this year. Good luck.
